Texas Ranch Chicken

Reviewed: Oct. 4, 2005
i fully enjoyed this meal, much more than i have other recipes i've tried from this site. i added brocolli and red peppers underneath the chicken, hidden valley spicy ranch dressing instead of regular, and added colby/pepper jack along with mozzarella. i ate it over white rice. it's something i'd def eat again!

Scalloped Potatoes and Onions

Reviewed: Nov. 3, 2010
wonderful. i've made this recipe several times. i slice the potatoes first and put them in water so they don't brown while i'm getting everything else ready. i don't change any of the ingredients but i do add ham because it makes it more of a stand-alone meal and not just a side dish

great, simple recipe but the oven step seems unnecessary

i made this recipe with Prego with mushrooms instead of adding the mushrooms and it was still great!

Cheesy Ham and Hash Brown Casserole

Reviewed: Dec. 2, 2009
pretty good but next time i think i'll combine the sour cream, cheese, and soup separately, and throw in a cup of milk just to make it creamier. also, i'm not sure the grated cheese is necessary at all. next time i think i'll put more chedder cheese on the top.

Maple Salmon

Reviewed: Feb. 3, 2011
very tasty! my only criticism would be that i with it stuck to the salmon a little more. i think in the future i'll warm the glaze a little with some cornstrach and i'll cook the salmon a little bit without it on, take the salmon out and scrap off any fat dripping and then up the glaze on and cook it just long enough to get warm

very tasty! i added plenty of salt and garlic powder and with the spicy smoked sausage i used it was plenty flavorful! the only thing i'd change is that i'd get a huge nonstick skillet next time

i sprayed the foil with Olive Oil cooking spray before putting the potatoes and onions in it and it didn't burn!

The Best Banana Bread

Reviewed: Sep. 22, 2011
i have cooked his many times. i like to add some spices (cinnamon, a pinch of cloves, a pinch of ground ginger- basically pumpkin pie spices!) and a couple tsp of vanilla extract. i also usually throw in a half a bag (1 c.) of chocolate chips

Ham Broccoli Braid

Reviewed: Oct. 2, 2006
i'm giving it this many stars ONLY because of the alterations i made. like other said, i cooked the onions and brocolli a bit before putting it in the cresent roll dough. instead of 2 tablespoons of mustard i put 1 tablespoon and 1/2 cup sour cream. the filling turned out moist and creamy and delicious! and i brushed a little butter on the top of the cresent dough(which was reduced fat) before putting it in the oven. i LOVED how it turned out and would definitely make it my way again.

Golden Sweet Cornbread

Reviewed: Dec. 11, 2006
the recipe was great! i used the amount of sugar is called for, 2/3 c., and i didn't think it was too sweet at all! however, i wanted to make cupcakes instead of using a square or circle pan. for one thing, $400 was too hot. and 20-25 minutes was WAY too long. of course my oven might run hotter than it should. i burned a batch before i found that 375 or 350 for 11-12 mins was just right.

Chocolate Mint Cookies I

Reviewed: Dec. 14, 2010
i have only tasted them (so far) not long after cooking them, but they sure are tasty! however, they were kinda flatter then i would like, and more crunchy. i followed recipe exactly (and added 1/4 tsp of mint extract) and read reviews to make sure i made them good. making them smaller (when i put the dough balls on the cookie sheet i made them about the size of one of those rubber balls you get in a 25cent machine) seemed to helped a little.

Southwestern Grilled Chicken with Lime Butter

Reviewed: Nov. 11, 2009
i wasn't all that impressed with the rub, it was ok but not very exciting. the butter was delicious though! i really liked the serrano pepper in it. i cooked the (boneless) chicken in the stove set on broil for about 15 mins. i had the chicken on the rack from our toaster oven over a pan. my only real complaint was that the pan wasn't big enough for all 4 pieces of chicken i cooked and i had to throw in the last one after the first 3 were done and by that tiem the dripping were starting to burn. so next time i'll either get a bigger pan or do it in an actual grill

Gourmet Sweet Potato Classic

Reviewed: Nov. 27, 2006
very tasty! a bit too sweet but that's nothing that drinking a glass of milk can't fix! i added about a 1/4 cup of shredded coconut with the topping and it was delicious. i didn't have heavy cream on me so i used 1 tablespoon whole milk and 1 tablespoon vanilla non-dairy creamer and it still turned out great.

Brown Sugar Meatloaf

Reviewed: Apr. 4, 2009
not too bad but i think next time i'll definitely take it out of the oven periodically and drain it and i think i'll add the glaze after only it's half-done. other than that it's pretty good. i'm not a huge onion fan so i think i'll substitute dried minced onions or onion powder or onion soup mix instead of real onion next time. it was a bit too firm so maybe i'll also try one less egg or more crackers too. the ginger gave it great flavor, i thought.

Day Before Mashed Potatoes

Reviewed: Nov. 27, 2006
i made this for thankgiving and i liked it but i think there was too much sour cream. it's practically all i could taste. next time i think i'll make it with only a 1/2 cup.
