No Roll Pie Crust II

This recipe was easy and even fun to make. I didn't pre-bake it, instead I added my pumpkin filling and baked it along with the pie. Turned out really yummy and flaky. Thanks for the recipe!

Baked Beans I

Potato Tacos

These weren't quite as yummy as I was hoping. The potatoes needed a little more flavor, were a bit bland. If I were to make these again, I would add a little garlic, a little butter, lots of salt and pepper, and maybe even some chili powder to the potato mixture. The ranch dressing was good with them. I will try these again sometime, with just a few tweaks. Thanks for the recipe.

Fideo (Mexican Spaghetti)

Thanks for the delicious recipe, we thought it was great. The only changes I made were to omit the onions and instead add some chopped green peppers and a little garlic. My husband already had some of the leftovers as a late evening snack (and he never eats leftovers)! We didn't cook it too long, make sure the noodles are al dente, the little bit of chew in the noodles really tops the dish off. Thanks again!

Breaded Hamburgers

These really turned out great! We ate them on hamburgers buns but I think next time we'll opt to eat them solo, maybe with mashed potatoes on the side. Be careful how much water you put in the bottom of your casserole dish, once the burgers start cooking, the juices from the burgers mix with the water, and the level raises a bit. Really a great recipe, and will be making again!

Mexican Turkey

This recipe really turned out great. We used our leftover turkey from Christmas dinner to make tasty tacos and burritos for a post-Christmas/pre-New Years Fiesta. Combine it in a soft tortilla with cheese, sour cream, avocado, and lime juice and you've got a delicious meal. Thanks for the yummy recipe.

Totally Tangy Baked French Fries

My husband and I really liked these. I put in a whole tsp of the red pepper flakes and almost 2 tsp of chili powder. I didn't have any brown spicy mustard so I just added 1 T of regular yellow mustard. They turned out really yummy, and spicy. We dipped ours in ranch dressing and they were great. Terrific Turkey Chili

Black Bean Salad

I left out the onions and the green pepper because I didn't have them on hand. Took it to a fiesta to eat as a dip and had some leftovers so we wrapped the salad in tortillas with some white rice and shredded cheese. Totally rocked!

Tuna Egg Sandwich

I'm very finicky about tuna, this is one of the only ways that I actually like it. Nice and simple recipe and I like the crunch with the celery. My husband and I add a little sweet relish to ours as well. Thanks for the recipe.

Jimmy's Mexican Pizza

I thought these were great. I left out the ground beef because I didn't have any, so we made our vegetarian style. I sauted the onion and garlic in some olive oil, along with some green pepper. And I added all of the spices meant to go in the beef, into the refried beans instead. Didn't have any Monterey Jack cheese, so we just used extra Cheddar. I sliced an avocado and some tomato with a little lime, and ate the mixture over the pizza, along with some sour cream. Was so good! Thanks for the super easy and yummy recipe!

Salsa Borracha (Drunk Salsa)

I will say that this recipe is different from the normal salsa that I usually make, but it is delicious. I added all ten jalapeno peppers, but I only added the seeds of five of them. I also added some cilantro, a little more garlic than it called for, and the juice from half of a lime. We ate it with our beef and bean chimichangas last night for dinner and it was so yummy. Will be making again for sure. Thanks for the recipe.

Best Lemonade Ever

Made this last night for dinner guests and everybody loved it. I used 8 lemons to come up with the 1 1/2 cups of juice, but I ended up adding a little more water than what was called for. Was very refreshing and went perfect with our meal of BBQ chicken and twice baked potatoes. Thanks for the great recipe!

BBQ Pork for Sandwiches

This was the first time I had used boneless pork ribs for pulled pork sandwiches. Turned out awesome, the meat melted in our mouths. I cooked mine on low for 8 hours, then the oven for 45 mins after adding the sauce. Loved it, thanks so much :)

Chef John's Flour Tortillas

Love this recipe and we've made them often. I like to double the recipe and use the leftover tortillas to make a sweet treat. Spray a plate with cooking spray, place cooked tortilla on plate, spray with a bit more cooking spray and sprinkle cinnamon and sugar on top. Microwave one minute, flip tortilla, microwave another minute, should be close to crisp (if not continue to microwave a few seconds, watch careful so that it doesn't burn). Let the tortilla cool, break into pieces, and drizzle honey on top. Yum!!! Thanks for an easy and delicious tortilla recipe!

Peach Cobbler Dump Cake I

We love this recipe. I like to add a couple handfuls of frozen blueberries with the peaches. I also drain one of the cans of peaches, add 1/4 cup of brown sugar on top of the cake mix, and an extra sprinkle of cinnamon. I could eat the whole pan. Love love love it. Thanks!
