Breaded Toasted Ravioli

Honestly, I found these to be pretty bland and tedious to make. I still think the recipe has potential, though. I think a bit of salt would have helped bring forth some of the seasoning. If I made this again it would be halved recipe or bigger raviolis because it took forever to batter an entire bag.

Broccoli Noodles and Cheese Casserole

My husband loves this so much that I barely got to eat any of it!! There are a few things that are important when making this dish. First off, it DOES need some seasoning. I used salt and garlic powder to taste when I combined the ingredients. Use small curd cottage cheese, it mixes and blends better than large. Also, when you drain your egg noodles let them rest for a bit so that they dry a little. Dumping them in right after will not only make the dish watery, but it won't allow the noodles to soak up the flavors as well. Salt the water when you make your egg noodles (I used extra wide No Yolks brand and light cheese to lessen the fat content). I used 2 heads of broccoli, 3 cups of cheddar cheese, 2 1/2 cups of cottage cheese and a 3 quart dish because I used the whole bag of noodles. It just needs a little tweaking is all! Great starter recipe that has a lot of possibility for a cook with an imagination!

Asian Coconut Rice

I am first going to premise this review with the fact that I used light coconut milk, which may or may not have affected my results. I do want to use this recipe again, but next time I will use a little less water. Also, make sure you stir the rice before right before it boils otherwise you will end up burning what is on the bottom. Luckily, I realized this before it happened. Secondly, like other reviewers stated, there isn't much flavor (again, it may be because of the light coconut milk) and the coconut rice that I buy from my local oriental restaurant is sweeter. I might try adding a little more sugar the next time as well. My husband really enjoyed the stickiness of the rice because it made it easier to eat with chop sticks. The rice was also much better the next day and was a great compliment to the pineapple stir fry with mango sauce that I paired it with. Thanks for the recipe! I hope my feedback helps. Enjoy!

Coconut Tofu Keema

As suggested by other reviewers, I did not use the amount of tomato sauce that the recipe calls for. I cut the sauce down to 3 cups and that was plenty. I also thought it needed more flavor, so I put more spices into the sauce as well. I liked it much better the following day, maybe because the tofu had time to marinate. It needs some adjustments, but has potential.

Roasted Brussels Sprouts

Great recipe! I love the slightly charred texture of the sprouts. If you are short on time or want them to be done faster, cut the sprouts in half before you cook them.

Cheddar Bay Biscuits

I have made this recipe 4 times now and have always been consistently complimented on these biscuits. My friends LOVE the flavor from the butter glaze that goes on top. It's a super easy recipe that doesn't really need any modifications. The only thing I change is adding more cheese (about 1/2 c.) to the batter. Make sure you don't pull them out until they are golden on top and be careful about putting these out before your main dish, your friends will fill up on them!! Guaranteed to make guests happy! :o)

Peanut Butter Pie I

I made this for my husband for his birthday. He loves anything peanut butter flavored and was very satisfied and excited when he got to dig in. The only reason I'm giving it a 4 instead of a 5 is because of how STRONG the peanut butter flavor was. However, it is called peanut butter pie, not peanut butter cheesecake. I would have preferred a little more cream cheese flavor so next time I will add more cream cheese and a little less peanut butter. This is a great recipe, though, and I do recommend it to anyone who is or knows a peanut butter fanatic. Thanks so much for sharing!

E-Z Drop Biscuits

Great for a very basic biscuit. I sifted the flour to make it more airy. My husband loved them, but we both agreed that the recipe may need a tad more salt. I think I will use 1/2 tsp next time instead of 1/4. I love that this is a no mess quick recipe that can be modified. I'm also going to try adding herbs and cheese the next time I make them so they aren't so bland. Thanks!

Dos Queso Dip

Wow!! My husband and I tested this out for Super Bowl Sunday and it is amazing! I only made a few minor changes because I didn't have some things on hand. First, I made my own taco seasoning (Taco Seasoning 1 Recipe-also amazing) and then put some jalapenos in with the sour cream/cream cheese mix because I didn't have pepperjack cheese. For the topping I used three cheese Mexican blend with taco seasoning already on it. Everything else I followed to the letter and enjoyed it thoroughly. Thank you for the wonderful recipe!!

Pierogi Casserole

My friends won't stop asking for this dish! I made it with vegetarian bacon and I was afraid that my meateater buddies wouldn't like it- but they loved it! I've even been able to use it as leverage for favors (teehee). Worthwhile and delicious.

Amish Breakfast Casserole

Delicious! My husband won't stop asking for this dish. I will make a pan on the weekend and he will have it for breakfast (or a snack) throughout the rest of the week. I'm vegetarian, so I used Morningstar Farms sausage patties and it's fantastic! The first time we tried it, we didn't have hashbrowns, but had frozen "country potatoes". I like it with those even better, but either way is fine.

Sour Cream Coffee Cake III

My husband and friends loved this moist and cakey treat! I added about 1/2 cup more brown sugar topping mixture because my husband likes it sweet. It was everything I could do just to get him to share! :o)

Southwestern Casserole

My husband and I loved this recipe! I only made a few changes because we LOVE very spicey food. Instead of Monterey Jack cheese, we used Pepper Jack and we also used Boca crumbles to replace the beef (I'm vegetarian). I also didn't have any chili powder on hand, so I used cayenne pepper. I recommend using more jalapeno peppers if you want it hotter. Fantastic! At my husband's request, I'll be making it for the in-laws too!

Soft Christmas Cookies

My fiance hated sugar cookies, until he had these! Before the first batch was even gone he asked me to make more! Our friends had fun decorating and devouring them at our weekly game night. I followed the recommended additions for nutmeg and salt. Delicious!

I love chewy cookies! These were really really great and I didn't have to feel guilty eating them! I will be making them again. I tried wheat flour instead of regular and it turned out nicely. :o)

Graham Streusel Coffee Cake

This recipe was quite delicious, however I think it could do with less butter for the crumb mixture.The mixture sunk to the bottom and is quite mushy. This also made it hard to sprinkle around evenly because it clumped so much. I followed the recipe to the letter and it tastes great. Also, I was expecting a denser consistency, but it is very cakey. I love the graham cracker idea though, and I'll certainly use that in the future.
