Busy Day Ham Bake

De-lish!!!! Super-fast, super-easy. The whole family loved it! I followed the recipe, but I used fresh broccoli because that's all I had. I love it with hot sauce!

Grandma Ople's Apple Pie

FABULOUS!!!! This pie is so good and the recipe is so easy. I only made one minor change and sprinkled some cinnamon on the apple slices after placing them in the pie crust and before assembling the lattice on top. The apples are still a bit firm, and lots of delicious caramel-like sauce in the pie. Pouring the hot filling over the pie before baking makes all the difference - a beautiful, crisp glaze over the latticework. What a great autumn recipe that really gets the house smelling good. Don't forget the vanilla ice cream!

High Temperature Eye-of-Round Roast

Excellent recipe. My roast was a bit smaller at 2.2 lbs, so I cut down the cooking time to 2 hours after shutting off the oven, and the could have used even less time than that, being so much smaller than 3 lbs. Upon removing the roast from the oven, I was very concerned that it would not be done as it did not feel very hot. I was nervous that the oven may have lost heat too quickly and the roast was not cooked. But, it turn out perfect!

Grandma's Orange Milk Sherbet

This is delicious!!! After reading the recipe, I found it hard to believe such a simple list of ingredients could be as good as the reviews were claiming, but it is great! I did take one reviewer's advice and added a dash of vanilla. The flavor is like an orange creamsicle from the Good Humor man. There are pineapple pieces, so if you don't like the chunks, you may want to consider using pineapple juice rather than crushed pineapple. Either way, the flavor is great. I halved the recipe so it would fit in my 1 1/2 quart ice cream maker. It took less time than regular ice cream and was heavy and slushy in less than 20 minutes. Definitely will make this recipe again.

Chocolate Velvet Ice Cream

Good ice cream; very creamy, smoothy. I thought it could use a little more sugar, a pinch of salt, and a lot less cream. As the instructions directed, I used an electric mixer to combine the ingredients and slowly added the cream. This does indeed produce a very mousse-like texture. I would replace a cup of the cream with a cup of milk and would not beat the mixture. I would also add 1 cup of sugar instead of 2/3 cup, and add a pinch of salt.

Easy Mint Chocolate Chip Ice Cream

Great mint chocolate chip ice cream and I followed the recipe exactly. The ONLY thing I wold change is to add shaved chocolate as opposed to the mini chips, and decrease the amount of shaved chocolate to 3/4 cup. The mini chips are too large and adding 1 cup of chips adds a chocolate flavor that is overwhelming the mint flavor. Other than that, great recipe, don't change a thing.

Creamy Pesto Shrimp

I just thought this recipe was OK. I agree with the previous reviewer that there is not nearly enough pesto flavor for me and the dish is extremely rich. I used half and half, and still found the dish too rich and lacking in a depth of flavor.

Bacon Wrapped Water Chestnuts II

I just can't believe that some users are giving this less that five stars! I made these for a pool party and they flew off the plate! Following the advice of previous reviewers, I baked the chestnuts on a cooling rack set on a cookie sheet so the bacon drained off while the chestnuts were cooking. I then dipped them in the sauce and put them back on the same rack. They were fabulous! If I could give them more than five stars, I would!

Cioppino

This is a great, traditional Cioppino recipe. I disagree with the other reviewers in their recommendation of fish stock, or any other ingredients to try to make the dish richer. This simple "fisherman's stew" is exactly what it is supposed to be: basic, buttery from the different seafoods, simple, and true to the basic principles of the dish - lots of seafood, good seasonings, basic tomato, wine, chicken broth, and limited other ingredients; no frills or whistles. Perfect served with some country or sourdough bread, sliced, buttered, and lightly toasted, and then rubbed with a half of a garlic clove. And wonderful with a nice glass of wine.
