Re: amount of flour: I checked Chef John's blog and the amount of flour called for there is "8 oz by weight (about 1-3/4 c.)". Anyway, just fyi.

Nutty Pumpkin Muffins

CAUTION: The body of the recipe does not include when to add the sugar. I was nearly ready to put the batter in the muffin tins where I caught the error. I doubled the recipe, but found that it lacked pumpkin flavor. Also, the amount of salt or baking soda (not sure which one) leaves an after-taste in the batter and cooked muffins.

Baked Sesame Chicken

I had to increase the dry ingredients x4 to accommodate the 4 chicken breasts in the recipe. I cut the chicken breasts in half lengthwise. The result was a pretty bland.
