Heavenly White Cake

Reviewed: Sep. 24, 2012
Having never made a cake where egg whites needed to be whipped and folded in, I was apprehensive as to how this would turn out. I figured I could easily mess it up somehow lol. I made this as is except I held off on whipping the whites until the end and I baked it in a butterfly cake pan (daughter's bday)---> it was PERFECT!! Not grainy, dry, or dense but light, moist, and fluffy. It hit me as I folded in the the whites that I forgot the extra 1/2c of milk others advised. Didn't use it and we loved it, but I might just try it next time for fun to see if there is much of a difference.

Sugar Coated Pecans

Reviewed: Dec. 24, 2012
Definitely try this recipe!! We love this! I've learned to just mix the spices/sugar into the beaten whites then mix in the nuts. One bowl=less mess.

Red Velvet Cookies

Reviewed: Dec. 17, 2010
I didn't care for them. What got me on these were their consistency. They weren't cakey or cookiey (sp?) to me. I just don't know how to explain it. Very, extremely dense...maybe? The cocoa was a little stronger than what I was expecting but I could live with that. I knew I wasn't going to end up w/mini red velvet cakes, but, again, the consistency is what turned me off. Hubby loved them, 5 yr old didn't (but she's picky), 3 yr old loved the frosting (licked it all off his cookies lol). The recipe is SUPER easy and fast which is a plus. But I just don't know if I'll make these again.
