Spring Strawberry Spinach Salad

Waaaaaaaay too much oil in this dressing. Otherwise an okay recipe. Strawberries and spinach always go good together. Cut the oil back to about 2 or 3 TBLS or at the very most 1/4 cup. You will find you have plenty of dressing.

Hearty Apple Almond Oatmeal

I have oatmeal every day. Suggestion - forget that instant stuff. Cook "Steel Cut" oatmeal. So good. I add chopped apple, dried cranberries, walnuts, cinnamon and 1 TBLS. ground flax seeds. Sprinkle a bit of brown sugar or honey and yum, yum, yum. In the summer time in place of apples and cranberries, I add 1/2 chopped banana, blueberries and walnuts. Soooooo good.

Pineapple Pretzel Fluff

Spool Sugar Cookies

For all of you who complained about the cookie being too oily, "Martha" has a very similar cookie and the recipe only uses 1 stick of unsalted butter. It is a very good AND pretty cookie. Try her recipe.

Banana Bread French Toast

Yummmm. So good. I had condensed milk in my pantry, but did not want to open a can for just a few TBLS. I had fat free half and half in fridge, so I used that with 2 TBLS sugar in place of the condensed. I also added 1 tsp. cinnamon to the mixture. This was good. My family liked it and I would not hesitate to serve to guests for breakfast .

Magic Wands

I make these for most of our holidays. Just change out the color of the sprinkles to go with the particular holiday. HOWEVER, I do not think icing would harden enough. I have always used melted white chocolate or regular chocolate. Then roll them in the sprinkles before the chocolate hardens and the sprinkles will adhere with no problem. Kids love them and they are so simple to make.

Easy Applesauce

Apple cider makes a good apple sauce. I have been making it that way for years. Unsweetened apple juice can also be used for that time of year when cider is not available. ( I use apple cider in my apple pies also. Just boil about 1/2 cup until reduced by half - adds something special to the pie)

Grilled Lemon Herb Pork Chops

I have been using something similar to this for years. This is what I do. For even more flavor, add about 1/4 cup low sodium soy sauce & 1/4 cup of E.V.O.O. to the above recipe. If you are not able to grille chops and must cook on stove, start with a COLD griddle or skillet, place the chops on griddle, then turn on heat and cook as long as needed. This way of cooking will ensure tender chops.

Grandma Johnson's Scones

These scones are fabulous and I make them often. I add dried cranberries along with orange zest. That is the way my family likes them best, although I have added raisins and cinnamon, etc. I found cutting these into 12 scones made them WAY too large. I form my dough into 3 equal discs, then roll each one out, cutting each disc into 8 equal triangles. Use a large pizza cutter for fast work. Then bake as stated, perhaps a bit shorter time. Once they cool completely, I make a thin glaze using powdered sugar and some orange juice and drizzle over the tops. I also like to add a bit of orange zest to the glaze. The nice thing about these scones is that they freeze "great" and you can pull out as many as you want to thaw. This is much easier than freezing them raw, then baking a few each time you want some, as one other reviewer suggested.

Precious Pineapple Cake

This cake is the perfect dessert for company. After reading all the reviews and seeing the complaints about the 3 layers being too thin, this is what I did. Using the regular box cake, I also added a small box (Jiffy - 1 layer cake mix) to the batter. Of course, had to add more of the other ingredients. 3/4 cup butter, 5 eggs, 1 1/2 cans crushed pineapple and 3/4 cup pecans. ( toasted the pecans first for a really good flavor). I DID NOT increase the frosting and seemed to have just the right amount. Then baked in 3 pans. The cake was beautiful, nice high layers and presented well.

Easy Lemon Bars

Going by the other reviews, I also doubled the "filling" for this cookie bar. I don't believe the amount written would have been enough. I also, like many other reviewers like a stronger lemon flavor, so I used the zest and juice from 1 1/2 lemons. I also added 1 box instant sugar-free lemon pudding to the cream filling and couple drops of yellow food color. The bars are very good. My family liked them. They are kind of like a little cheese-cake cookie. Very good.

Ma's Premium Ice Cream Pie

I made this for a large party and so doubled the ice cream part using quarts. I made my own chocolate cookie crumb crust (just google it for the recipe). I made it in a large cheesecake pan with removable sides. Everyone loved it and I will make this again for special occasions.

Caramel Pound Cake

C'mon folks, you don't have to be a rocket scientist to make this recipe. It is simple. Starting from the first ingredient, 2 1/4 cups brown sugar - down thru the pecans belong in the cake. The remaining ingredients are for the icing. As for the cake....it is delicious and I will make again. My friends loved it.

Sliced Tomatoes with Fresh Herb Dressing

This is fabulous. You MUST use fresh herbs and not the dried stuff. I also purchased fresh mozzarella balls from my local Italian grocery store....sliced the cheese and added to this salad. Other than that, I followed the recipe "as is". My guests loved it and could not get enough of it. Very Yummmmmmy!!!!!!!!!!

German Potato Pancakes

To the reviewer "Amanda" (posted Nov. 26, 2007)...Amanda - mashed potatoes? These are NOT to be made with mashed potatoes. You made a completely different pancake using them. This is an old German recipe and you NEED to use GRATED, RAW potatoes. I have been making these for years and got the recipe from my German Grandmother. Please, try them with the grated raw spuds and you will not believe the difference.

Pumpkin Cookies V

These cookies are great and very moist. I have made them two times. The first time I baked them exactly as the recipe was written and the family really liked them. The second time I made them, I added two to three big handfulls of dried cranberries (and still topped with the icing) and my family just loved them this way. We love anything pumpkin and I will be making these often.

Slovak Stuffed Cabbage

This is a great recipe and reminds me of my Grandmother's stuffed cabbage I ate as a child. I added beef broth in place of the water, only used one can of sauerkraut (rinsed well and drained) and the SECRET in nice tender leaves (as my grandmother would say) is to slow cook it. Bake at 250 degrees and cook all day. Yummmy...

Pumpkin Butter

I would like to know if anyone out there has any idea if I could make this recipe and instead of "canning process" would be able to jar it and put in deep freeze. I know I need to leave space at top for expansion, just wondered if anyone has tried this or has any ideas on freezing this mixture.
