Lentil Soup with Lemon
after reading many reviews and other recipes I wanted to make sure my soup had enough flavor and here is what I did. I think the soup came out really good and will make it again.
use 1 1/2 cups lentils, used lots of garlic than suggested at least 8 mediums size cloves, at least a cup of carrots, 2 sticks of celery, added some garden riped tomatoes, used 2 - 3 tsp of cumin, doubles the chili powder, used ketchup instead of paste, tripled the broth ( mixed beef & chicken b/c I had it open) added a big squirt or 2 of siracha sauce, added 1 potatoe chunked big. I also added fresh baby spinach and broken spaghetti that I cooked separate. I did keep adding chicken broth as it was cooking to avoid all beans an no broth. I did puree some of the beans a potatoes for texture. The lemon and red wine vinegar do bring out the flavors in the soup.
