Fluffy and Delicious Pancakes
This is definitely a keeper! My kids loved how big and fluffy they came out. I did omit the cinnamon and vanilla. I cut my white flour to 3/4 and put a 1/4 whole wheat flour, added 2-3 tb spoons of ground flax seed, eliminated the butter and added plain greek yogurt. You can't tell the difference without the butter and this & plus the flax add lots of protein. I did cook them on a lower heat because the batter is thick and takes longer to fluff up. I did add a little more sugar to sweeten them up for the kids but you can't really tell. I have made them 2x so far, and you can't tell the difference, so if you want to add protein try it.

Bread Pudding II
Came out awesome! I made minor changes. I doubled all ingredients, used 8 - 10 cups of cubed bread, about 3 1/2 cups milk, added 1/2 cup brown sugar, dash of clove & nutmeg, cooked rasins and walnuts in water and meyers rum. Drizzled a litte rum at the end over saturated bread and sprinkled cinnamon sugar mixture over the top. Came out awesome and next time may add fruit as some have suggested. Will make again.

Lentil Soup with Lemon
after reading many reviews and other recipes I wanted to make sure my soup had enough flavor and here is what I did. I think the soup came out really good and will make it again. use 1 1/2 cups lentils, used lots of garlic than suggested at least 8 mediums size cloves, at least a cup of carrots, 2 sticks of celery, added some garden riped tomatoes, used 2 - 3 tsp of cumin, doubles the chili powder, used ketchup instead of paste, tripled the broth ( mixed beef & chicken b/c I had it open) added a big squirt or 2 of siracha sauce, added 1 potatoe chunked big. I also added fresh baby spinach and broken spaghetti that I cooked separate. I did keep adding chicken broth as it was cooking to avoid all beans an no broth. I did puree some of the beans a potatoes for texture. The lemon and red wine vinegar do bring out the flavors in the soup.
