Sweet Potato Pie I

Sweet potato pie is a traditional dessert for Thanksgiving and Christmas in my household. This is the best I've had in forty years. This pie is easy to make and the perfect consistancy. My husband and three year old couldn't get enough.

Chocolate Pecan Pie

This pie is easy to make and bakes up beautifully, but it's just too sweet for our palates. If you love chocolate, and have an awesome sweet tooth, don't pass this one up.

Fish Fillets Italiano

Very good. I took the advice of others that posted and added italian seasoning, salt, pepper, red pepper flakes, and anchovy paste. Next time, I'll simmer it to the point where most of the liquid is asorbed to intensify the flavors, which will improve the dish.

Quick and Easy Monkey Bread

This is so easy and so delicious. My family loved this bread. Here's how I made mine. I used pecans and vanilla instant pudding mix rolling each roll in butter, then the pudding/brown sugar followed by a roll in the cinnamon/sugar mix. I poured more of each mixture, butter, pecans on each of the two layers. As for the butter, I used half a cup and only ended up using half of the pudding/sugar mix-it just look like too much of a good thing to me. I placed the bunt pan filled with the softend rolls and sugar/butter concoction into my oven over night setting the oven on bread proof. I woke up six hours later to a mess since the rolls had risen so much that some of the sugar coated rolls fell out of the pan. After cleaning up the mess, I baked the bread and it was perfect for my family. I can't get enough of this bread. It is soo good. Enjoy!.

Sweet Potato Casserole II

Very good. My daughter is allergic to tree nuts so I omitted those and they were not missed. The casserole was light and fluffy;just the right thing with ham. My family loved it.

Awesome Sausage, Apple and Cranberry Stuffing

Spiced Pecans

Wow! These are so easy to make and taste so good. I mixed everything following the recipe exactly. As one of the reviewers suggested, I mixed everything in a zip lock bag and spread the pecans on a foil lined pan that I had sprayed with a little olive oil. I cooked my nuts for 23 minutes. Yummy!!!

Sugar Coated Pecans

These are really easy to make and addictive. I made these for Christmas gifts putting them in inexpensive glass jars tied with ribbon. I'll be making these year after year for gifts since making them are much easier than cookies,which is a time saver for me.

Salsa Chicken

Suzy's Mashed Red Potatoes

Great recipe. I have never been able to make good mashed potatoes so I was really pleased with the results of this dish. I did not follow the recipe exactly because I thought it was too rich for my family. I used one percent milk, 1/4 c of butter, 2T light sourcream and 1t mashed garlic. The result was light, fluffy and flavorful. Perfect.

Black Bean and Salsa Soup

The soup is super easy to make and tastes fantastic. I took the advice of another reviewer and added another teaspoon on cumin, cilantro, and cheese and it was a hit with my family. My husband has asked me to make this recipe part of our regular meal rotation.

Banana Banana Bread

Easy, moist, and delicious. I put a litte brown sugar on top before baking as one of the previous reviewers had done, which gave the bread a sweet crunchy top. Other than that, I followed the recipe as written. Great recipe!

Quiche Lorraine I

I altered the recipe to reduce the fat content for my family. Twelve slices of bacon, cream, and cheese....I just could not do it, although it sounded good. Anyway...I used twelve slices of turkey bacon, fat free half and half, five eggs, half cup of minced onion with one clove of garlic, seasonings, and reduced fat Jarlsberg lite swiss cheese. I prepared the ingredients as directed, dividing everything between two pre-baked frozen pie shells ( I baked the pie shells for 12 minutes so that the bottom would be done/flaky) and baked as directed. The results were fabulous! My husband could not get enough of the quiche. He admitted that he did not think he'd like the dish, but was very pleasantly surprised. My six year old daughter loved it too. I'll be making this recipe again and again. I'm very pleased that it turned out so well after converting the recipe to a lighter version.

Jalapeno Chicken II

I followed the recipe as written, but used fat free dressing, low fat cheese and turkey bacon. This recipe is a winner in my book. I loved the taste. The only mild complaint I have is that the jalapeno did not soften with cooking/grilling; it was still crunchy. The bacon imparted a subtle smokey taste, which was a nice complement to the italian herbs and cream cheese. Yummy dish. I might pop the jalapenos in the microwave to soften before grilling next time.
