Breaded, Fried, Softly Spiced Tofu

Very good and easy to make. I've recently stopped eating pork, beef, and chicken and I'm making an effort to serve less meat to my family. This recipe fills the meat void. I followed the recipe as written and ended up with browned crispy nuggets that were really tasty. As others have stated, a sauce is needed. I mixed ketchup, soy and rooster paste for a spicey dipping sauce that was excellent. Next time I'll try a dipping sauce from this site. This recipe is a keeper!

Sweet Potato Pie II

I mixed this in my blender, which yeilded a very professional even texture. With that said, this recipe needs something more, it's a tad bland. Next time, I'll add vanilla, more of the spices, and brown sugar since it could have been a bit sweeter, too.

Balsamic Roasted Pork Loin

Delicious! As suggested by others, I added a lot of garlic and 1/4 cup of honey. I will be making this again and again. It's too easy and delicious not to.

American Frittata

Pretty good following the recipe as written. My husband and daughter did not like so many potatoes in this frittata. I love potatoes so I thought the ratio was yummy. Next time, I'll cut down on the potatoes, add two more eggs, and green onions. This recipe is easy to tweak to your liking.

Very good biscuits and super easy to make. My family raved about the taste and I raved about how easy it was to make such tasty and tender biscuits. I'll never buy frozen biscuits again. Try this recipe, you'll enjoy them.

Jalapeno Chicken II

I followed the recipe as written, but used fat free dressing, low fat cheese and turkey bacon. This recipe is a winner in my book. I loved the taste. The only mild complaint I have is that the jalapeno did not soften with cooking/grilling; it was still crunchy. The bacon imparted a subtle smokey taste, which was a nice complement to the italian herbs and cream cheese. Yummy dish. I might pop the jalapenos in the microwave to soften before grilling next time.

Quiche Lorraine I

I altered the recipe to reduce the fat content for my family. Twelve slices of bacon, cream, and cheese....I just could not do it, although it sounded good. Anyway...I used twelve slices of turkey bacon, fat free half and half, five eggs, half cup of minced onion with one clove of garlic, seasonings, and reduced fat Jarlsberg lite swiss cheese. I prepared the ingredients as directed, dividing everything between two pre-baked frozen pie shells ( I baked the pie shells for 12 minutes so that the bottom would be done/flaky) and baked as directed. The results were fabulous! My husband could not get enough of the quiche. He admitted that he did not think he'd like the dish, but was very pleasantly surprised. My six year old daughter loved it too. I'll be making this recipe again and again. I'm very pleased that it turned out so well after converting the recipe to a lighter version.

Banana Banana Bread

Easy, moist, and delicious. I put a litte brown sugar on top before baking as one of the previous reviewers had done, which gave the bread a sweet crunchy top. Other than that, I followed the recipe as written. Great recipe!

Black Bean and Salsa Soup

The soup is super easy to make and tastes fantastic. I took the advice of another reviewer and added another teaspoon on cumin, cilantro, and cheese and it was a hit with my family. My husband has asked me to make this recipe part of our regular meal rotation.

Suzy's Mashed Red Potatoes

Great recipe. I have never been able to make good mashed potatoes so I was really pleased with the results of this dish. I did not follow the recipe exactly because I thought it was too rich for my family. I used one percent milk, 1/4 c of butter, 2T light sourcream and 1t mashed garlic. The result was light, fluffy and flavorful. Perfect.

Salsa Chicken

Quick, easy, and delicious. The chicken was flavorful and moist. I served black beans, brown rice and sliced avacodo on the side and got rave reviews from my family. This will become part of the rotation of our family favorites.

Sugar Coated Pecans

These are really easy to make and addictive. I made these for Christmas gifts putting them in inexpensive glass jars tied with ribbon. I'll be making these year after year for gifts since making them are much easier than cookies,which is a time saver for me.

Spiced Pecans

Wow! These are so easy to make and taste so good. I mixed everything following the recipe exactly. As one of the reviewers suggested, I mixed everything in a zip lock bag and spread the pecans on a foil lined pan that I had sprayed with a little olive oil. I cooked my nuts for 23 minutes. Yummy!!!

Sweet Potato Casserole II

Very good. My daughter is allergic to tree nuts so I omitted those and they were not missed. The casserole was light and fluffy;just the right thing with ham. My family loved it.
