Chili-Lime Chicken Kabobs

This is a wonderful recipe!! I followed it to a "T" and let it marinate for several hours before grilling. The chicken is so tender and flavorful. I have made several times already this summer. I skewer the chicken with zucchini, mushrooms, yellow squash and red bell peppers that I mariate in Kraft Greek Vinaigrette dressing. Soooo yummy!

Colleen's Slow Cooker Jambalaya

Good recipes, but I was expecting a lot more since the reviews were so high. Maybe it wasn't as good because I didn't add shrimp? It lacked flavor and was definitely very soupy. I ended up adding the rice to the crock pot for an hour along with a can of tomato paste to help thicken it up a bit. I don't know that I would make this again.

Delicious Raspberry Oatmeal Cookie Bars

These were soooo good! The only change that I made was that I used whole wheat flour in place of all-purpose flour to make them a bit healthier. You couldn't taste the difference!!! So easy, and so good. I second the other reviewer that said you should make a double batch because these will vanish quickly!

Scrumptious Strawberry Shortcake

These were YUMMY!!! I followed the advice of other reviews and omitted the cream of tartar and only used 3 tsp of baking powder. I also used fat-free evaporated milk in place of heavy cream to reduce the fat. Soooo good, I didn't miss the cream at all!

Chicken Cilantro

This was a great recipe! The ease of making this dish and the bold flavors is wonderful! I did make a few slight changes: I used brown rice and cooked it seperately ahead of time. I seasoned my chicken with Tony Chacheres, garlic powder and pepper and sauteed it with the onions and olive oil. I used corn instead of hominy and I also added cayenne pepper to the dish to taste. Once chicken had simmered in the cilantro sauce, I added the rice and corn and simmered the flavors and then cooked out the additional moisture to give the dish a dirty rice consistency. Great with lime, but doesn't necessarily need it. Excellent, excellent, excellent!

Best Beef Dip Ever

Wow, this was fabulous, and sooo easy! I did modify the recipe based on others reviews. My roast was approximately 3.5 lbs. I used 3/4 cup soy sauce, 4 cups beef broth, 3 bay leaves, 1 TBSP minced garlic and 1 tsp of rosemary. The au jus was perfect!! We will be making this often!

Southwestern Egg Rolls

These SW Eggrolls were amazing!!! Only changes that I made were subbing cilantro in place of parsley and we did not fry them. Instead, we rolled the egrolls up and sprayed they were non stick cooking spray and baked! I sereved them with Jalapeno Cream Sauce and Spanish rice. SOOO good, and so much more healthy than Chili's version! Thank you for an incredible recipe.

World's Best Lasagna

Absolutely fabulous!! My husband (who is a tough critic) and guests loved it, and said that this lasagna was as good as - if not better than lasagna they had had in Little Italy in NY. I followed the recipe exactly with the exception that I only used 1 Tbsp on sugar in the sauce. Excellent, excellent, excellent!!!

Three Cheese Garlic Scalloped Potatoes

Excellent! I did change the recipe slightly after reading reviews: I cut the cream in half and in its place whisked together one cup of sour cream and one cup of milk. I also covered the dish while baking with foil and sprayed the underside so that the cheese wouldn't stick. We had not problems with underdone potatoes. Everyone came back for seconds!!

Gooey Butter Cake III

I decided to make this recipe after tasting it at a party, it was sooo yummy..but for some reason, mine was a complete disaster! I'm usually a great baker, but I ended up throwing the whole thing away. I'm not sure what went wrong, but I know this cake is amazing if it is made correctly. Truly a five star recipe, but my mishap warrants a 4 - star caution.

Pumpkin Chocolate Chip Muffins

These muffins were ok, but I was expecting them to be out of this world with all of the reviews. Even with double the spices as many reviewers said, they were only so-so. Sadly dissappointed..

Black Bean Vegetable Soup

I made this soup last night, and it was absolutely delicious! I followed the advice of other reviewers and cut the broth down to 2 cups, added an extra can of black beans (not pureed), a handful of cilantro which I blended in the food processor, and I also added a little more cumin and chili powder to my personal taste. YUMMY!!! I will definately keep this recipe in my files :-)
