Jamie's Minestrone

Everyone I have served this to has loved it. I did increase the red wine to 1 cup and I don't measure the vegetables. I use what I have. It freezes really well so I make it up and keep it on hand in the freezer. I also don't use the pasta. I think it is unnecessary.

Catherine's Spicy Chicken Soup

This is a very good recipe. My family loved it. I did cut the pepper down to 3/4 tsp. and the Chili powder to 2 Tbsp. as some don't like real spicy food. I also added a can of black beans. I froze 1/2 of it and will see how that turns out in a week or so.

Mexican Casserole

My family really liked this. I did make changes after reading the reviews. I added some onion and red bell pepper when I browned the chicken. I didn't drain anything. Since I was out of salsa, I added a can of diced tomatoes and a small can of green chilies. I used the whole package of taco seasoning. I served it over rice and used cheddar cheese as that is what I had. My dish did not look like the picture shown but really was good. So nice to find a chicken recipe that doesn't start with cooked chicken. The men in the family added hot sauce as this is just mildly warm. I added black olives but wouldn't do it again or if I did I would use sliced olives. They didn't add anything to the recipe.

Turkey Shepherd's Pie

This is a good recipe for leftovers but I found it too dry. I had to heat up the rest of my gravy to put over it. It is also very "carb" heavy. I think If I made this again I wouldn't use the corn but left over green beans. Ok, I added more gravy to the leftovers and some cheese on top. NOW it is a 5 star recipe

Egg Custard Pie III

This is a very good custard. It is too sweet so I will cut the sugar next time. The butter came to the top and puddled so I will not use it next time. I also will bake the crust for 10 minutes instead of 5 as it wasn't done enough. But I recommend this recipe as it is easy and very good.

Big Soft Ginger Cookies

I thought these would be soft,fat cookies but mine are flat. The flavor is terrific though. I did use the orange juice instead of water. I chilled for 2 1/2 hours and they were still very sticky and soft for dough. Next time I will add more flour. My whole house loved them. I made small balls and got almost 4 dozen. But alas not enough to take to the bake sale. They got eaten too fast.

BBQ Pork for Sandwiches

This is so easy and really good. I put the pork in my slow cooker, had it on high until I went to bed, lowered the temp to low and let cook all night. In the morning before church I shredded the pork and put it back in the cooker with the BBQ sauce and left it on low. I used KC Masterpiece Original and next time will use a bolder, spicier sauce. This one was too sweet. BUT Oh YUM and so easy.

Liz's Astounding Chocolate Chip Cookies

These are good but not the best. They have too many chips in them and not enough salt. I increased the recipe to 72 servings. I think if I were to make them again I would increase the salt to 1 tsp instead of 3/4 tsp and I would only use 2 1/2 cups of chips instead of 3 1/2 cups. I also added nuts as my family thinks it isn't a good cookie if it doesn't have nuts.

Beth's Spicy Oatmeal Raisin Cookies

These are very good. I doubled the cinnamon as I really like cinnamon and tried adding the allspice someone mentioned. I couldn't taste the allspice. I do think they need a little more salt and some nuts. They don't last long in my house. I make them often

Seared Ahi Tuna Steaks

This is very good but there is too much salt in the recipe. I made this for 4 and the recipe called for 2 tsp kosher salt. I only used 1 tsp and it was still salty. But other than that, everyone loved it. Will definitely make again. Just with less salt. I also used yellow tail tuna steaks.

Chicken with Mushroom Sauce

This is so good. I used a whole cut up chicken and followed the recipe except I used crimini mushrooms. My family loved it. I would use chicken strips or cut up breasts next time.

Chili II

Oh MY Goodness this is soooooo good! I made it exactly and the only thing I would change is the olive oil. Not sure why you would need it. I use lean beef too. MY NEW Favorite. YUMMO. If I could give it more stars I would.

Eggplant Croquettes

I made this last night and was really disappointed. I love eggplant and after reading all the reviews thought this would be a good addition to my files. It was way too much bread, and salt. Maybe my eggplants were too small. I did bake them first then mix and bake again to cut down on the fat. BUT I won't make again.

Creamy Chicken

Good, easy comfort food. I used the season salt but think next time I won't. My hubby didn't like the season salt. Served with mashed potatoes. For an easy meal this is not bad.

Curried Microwaved Chicken

This is really good. I did as others suggested and did it on the stove top. I think I will try it in the microwave after browning the onion and chicken. I used evaporated milk and 1% milk as I didn't have any cream. Was still rich and yummy. I suggest rice as the gravy is great. I think next time I will put more chicken parts in it. Definite keeper!

Accidental Grilled Chicken Salad

This is so good and so easy. My family loved it. I used white onions and cremini mushrooms because that is what I had. I don't see how this could be better. The marinade is so good and simple I will use it for grilling.

Mixed Seafood Curry

Oh Yum! This is so good. I added more asparagus, shrimp and mushrooms. I also followed advice and added 1Tbsp of Peanut butter. I didn't have curry paste so I added a lot of curry powder. I will go find the paste but it was really good even with the curry powder. Everyone loved it. I served it over a mix of brown and wild rice. Thanks for sharing.

I made these for a BBQ and everyone there raved. I had to give the recipe to all there. I didn't have any butter beans so I used kidney beans. Can't see any difference. Will definitely make again.

Honey Curried Roasted Chicken and Vegetables

I did this in my crockpot with a 5+lb chicken. I cooked it too long but it was still wonderful. I added a little chicken broth but won't next time. I ended up with a chicken stew. The flavor was great I just over cooked it. I can hardly wait to do it right.

Barbie's Tuna Salad

This is very good. My family loved it. I used leftover grilled Tuna and added enough mayo to make it stick together. I used the Pampered Chef Dill seasoning as I didn't have any other dill. I, personally,would use less sweet relish and a little more curry but my family likes sweet relish.
