Southern Potato Salad

This is the best potato salad I've ever eaten! WARNING: the potatos do not cook all the way in 15 minutes. Boiled whole for well over 20 minutes and they were still a bit too crunchy. I will cut the potatos in half before boiling next time. Didn't add celery (don't like celery). Overall great. Scored a four because of the cook time issue (the salad would have been a throw away had I not second guessed the instructions). otherwise, its a 5 star. Thanks for the great recipe.

Oatmeal Peanut Butter Cookies III

Didn't have cream, so I just made the cookies. EXCELLENT! I halfed the recipe (didn't want all those cookies to tempt). With the recipe halved, I sectioned the dough into six large cookies and baked them on top of parchment paper. Because they were so big, it took a full 12 minutes to cook, but they ended up perfect. Crispy around the edges but sooo soft and yummy in the middle. Thank you for the great recipe!

Red Rice and Sausage

My partner eats pork; I don't. This recipe was a very tasty compromise, and was claimed to be excellent by my picky, but pork loving partner. I followed the recipe exactly, with a few exceptions. I left out the fresh green peppers and instead used a couple of tablespoons of freeze-dried green peppers. Diced canned tomatos were used instead of stewed. Also, I doubled up on the turkey bacon. For sausage, I used Grandessa brand Canjun style chicken Andoville (available at Aldi's stores). This was the key to turning this into an incredible meal. It adds lots of spice at an affordable price (I think around $3 for the package). The spagetti sauce (Grandessa's Portebella Mushroom) was a 26 oz. jar and that seemed the perfect amount (I think 14 oz would not be nearly enough). For a side, I just popped open a can of corn, which turned out to be a perfectly bland companion to this spicy dish (a very complimentary "scoop-in" ingredient that breaks up the flavors). Overall, well worth the cook time and definatly a recipe I'll make again. Thanks AutumnJon!

Chicken Enchiladas II

This was a little too creamy/ milky with the soup. But a good meal every once in a while. Partner's immediate reaction was to approve, but changed his mind later after eating a meal of it. he voted it a 3 too.

Cream Cheese, Garlic, and Chive Stuffed Chicken

Extremely rich food, but this recipe was awesome! I'm a new cook and appreciated how easy it was to make yet how fancy it looks on the plate. My partner loved it (he's very picky about things like this). I paired it with mixed veggies and a french loaf w/ oil. I used 3 strips of turkey bacon per chicken piece to hold in the filling. Also I used fresh chives b/c they were cheaper but it tasted great anyway. Not the healthiest meal but i'll make it again.
