Vegetarian Mexican Inspired Stuffed Peppers

LOVED this recipe! Tried it last month, am making it again today. I didn't bother boiling the peppers first, just baked them with the stuffing inside. Mixed in salsa instead of the chili-style diced tomatoes and plan to do that again (with my beloved Herdez this time). I had leftover rice & bean mixture after stuffing my peppers but it's delicious just on its own too.

Black Bean Vegetable Soup

Spicy Basil Chicken

This was pretty good, although sweeter than what I'm used to for basil chicken...next time I'd try it without the sugar. I used chili garlic paste and vegetable oil instead of chili oil (couldn't find it at the grocery store). And I had to use regular basil instead of Thai basil, but otherwise I followed the recipe.

Apple Squares

Sorry, but this was just sort of average to me...I was expecting more from all the great reviews. Kind of like a dense apple cake in consistency. I used double the amount of apples and half the amount of sugar, which I'd recommend. It IS very easy to make though.

The Best Thai Coconut Soup

This soup is AMAZING! I only made a half-recipe, so used just 1 can of coconut milk. I also used regular mushrooms & red peppers instead of shiitake mushrooms & shrimp, but will try with shrimp and/or chicken next time. For the sake of convenience, I used the lemongrass that you can buy in a tube...just squeezed some in, didn't measure. I thought this soup was so great, I took some in to work to let my co-workers try. One of them asked for the recipe and made it later that week and could not get over how EASY it is to make! It definitely does taste like it should be more work. ;o)

Aunt Anne's Sesame Cookies

Very good, EASY cookie. I like cookies that are "just a little bit sweet" and that's what these are. Anise flavor is mild. I skipped the milk step, but sesame seeds still seemed to stick pretty well. I would make my logs a bit shorter next time...the first few I made were short and I liked the appearance better. Plus, the very middle of the longer logs wasn't quite cooked enough after 20 minutes (not enough to make me not eat them though!).

Grandmother's Buttermilk Cornbread

Just tried this (my first time making corn bread). Turned out perfect! The only change I made was to halve the amount of sugar...didn't want really sweet cornbread because I was adding some diced jalapeno and grated cheddar. Baked in muffin tins for 20 minutes and they turned out moist and tasty.

Easy Granola Bars

Yummy and SO easy. I substituted some Rice Krispies for part of the oatmeal...next time I may try cutting down on the condensed milk as others have done, as it's pretty high calorie/fat. I made half dried apple/dried cranberries/cinnamon/almonds and half dried cherries/chocolate/almonds...loved them both! Mine were getting dark around the edges and, when I checked, on the bottom but the top was still too pale for my liking. So after they cooled a bit and I cut them into bars, I flipped them over and stuck them back into the oven for 5-10 more minutes. The color improved and they were nicely crunchy/chewy.

Hard Rock Candy

Love this candy! Very easy to make with a candy thermometer. I've made cinnamon (using flavoured oil) and ginger (my own experiment, using fresh ginger slices simmered in water). My co-workers love it!

Triple the Ginger Cookies

These were pretty good, but I was expecting better from the reviews. I followed the recipe exactly but my cookies came out rather flat and, for some reason, much too salty! Texture was good though.

Banana Bran Muffins

These are amazing! One of the best bran muffin recipes I've tried. Nice, cake-like texture. In my oven, 20 minutes was perfect. I tried to make them a little healthier by using 1 cup AP flour and 1/2 cup whole wheat. Also wanted to sub in applesauce for the butter but unfortunately my applesauce had gone moldy. Will try next time though. Anyway, these are delicious!!!

Easy Chocolate Banana Cake

This was very disappointing. Could not taste the bananas, even though I used 2. And even though I wondered why you would use a white cake mix and then add cocoa instead of just using a chocolate cake mix in the first place, I was scared to deviate from the recipe so I did it. But since I ended up with what is basically a plain chocolate cake, I think I would have been better off using a choc. cake mix to begin with - - at least then it would have been a rich, dark color!
