Roasted Radishes

I had never heard of roasting radishes but our garden yielded too many all at once, so I tried this. I used fresh rosemary instead of thyme and added black pepper. They weren't quite right but I tossed in a little bit of brown sugar and this helped. I know now, though, that I can throw radishes in with other root vegetables.

Spiced Parsnip Soup

I had 6 pounds of parsnips and onions from the garden to use up, so I made a huge vat of this soup. Only changes I made were to make it vegan, using vegetable broth in place of the chicken broth and coconut milk in place of the cream. It turned out well (which is good because now I have 20 portion containers of it in my freezer).

Eggplant Parmesan For the Slow Cooker

I, too, didnt fry the eggplant prior to putting in the crockpot. I did nuke it in the microwave until soft, though. This was good. I think next time I will use shredded mozza instead of sliced.

Wild Rice Casserole I

Omitted the butter (it definitely didn't need it) and the onions (my husband won't eat anything with onions in it) but put in more sliced mushrooms instead. The only instant wild rice mix I could find was "Uncle Ben's Natural Selections Olive Oil and Garlic". And I have no idea what "American" cheese is but I used shredded cheddar. This was super easy to make and it tasted pretty good, too, but next time I will add broccoli instead of celery.

Coconut Curry Pumpkin Soup

Modified this and it was the best soup I've ever made! Used fresh pumpkin (my jack o lantern) and A LOT of fresh ginger instead or garlic or onions. Omitted coconut oil but put in the whole can of coconut milk (400ml). So really, this become pumpkin-ginger-coconut-curry soup. But oh so good!

Raisin-Studded Apple Stuffing

Made this vegan by substituting margarine for butter, McCormick's all-vegetable "chicken" bouillon for the chicken stock, and Yves sweet Italian sausage for the sausage. Also used herbs de Provence because I didn't have just thyme. It made A LOT which is good because I love it!!

Patty's Tofu Burgers

This made a dozen large burgers, not just 8. I added four extra eggs since the commentors suggested more egg to hold the burgers together. Also used instant oats. They still didn't stay together great, but not bad. They were okay with sauce on top - otherwise bland.

Easy Vegetable Pot Pie

The recipe only made enough to fill one deep pie shell. Therefore I expected to need to bake this longer...yet after 1h20 it was still too watery. Next time I will leave out the milk or only put in half as much. However, it tasted great, was SUPER easy and could be changed for variety by varying the type of soup, spices, and vegetables used. I am definitely trying this again.

Crustless Spinach Quiche

Super easy to make and it packs a great punch of protein and iron. I used the Kraft 3-cheese Italiano blend because it was on sale. Might have been better with another kind of cheese. Also would like to try it with freshly cooked spinach. I normally love spinach, but the store-bought frozen stuff I used didn't help the recipe. I threw in some tomatoes for colour and they were really nice. Definitely will make again but will try variations.
