Stuffed Mexican Peppers

A tastier variation on the usual stuffed pepper! I make them with ground turkey to up the nutritional value, mix in a can of niblet corn into the filling, and top them off with grated cheese. Lastly, I never pre-cook the peppers, otherwise they're too mushy! I stuff them raw and cover to bake. Gives the perfect textured pepper!

Spicy Turkey Sweet Potato Gumbo

Great taste! Couldn't be bothered with the multi-step directions, so I omitted the oil and threw everything except the yam and flour into a pot, and turned it on. I let it cook about 40 minutes then mixed the flour with some reserved broth, added it and the yams to the pot, and cooked it another 20 minutes. Substituted zucchini for the green pepper (just what I had on hand) and added the hot sauce over each plate at the end, for individual taste. Served over rice, and it turned out great without all the work!

Chocolate Mint Candies Cookies

Spinach Cheese Manicotti

Very tasty. I added a pound of fried ground beef (seasoned with basil, oregano, Italian seasoning, salt, and pepper) and a can of mushrooms to the tomato sauce (husband refuses to eat a meal without meat, ha!). To fill the manicotti, I used a butter knife to get the filling in - worked well.

Apple Strudel Muffins

Yummy muffins, but made a few changes: used 1/2 white and 1/2 brown sugar; doubled the apples (shredded half, chopped half); doubled the topping and put 1/2 in the middle of the muffins (ie: filled muffin cup half full, spooned in some topping mixture, filled the muffin cup, then topped each muffin with more topping); and added 1tsp. cinnamon.

Peach Muffins

Very tasty muffins but I could only give it 4 stars because there was no way I was using 1 1/4c. oil in a recipe! I planned to substitue in 1c. apple sauce for 1c. oil, but someone (DS) had eaten it all without my knowledge, so I substituted 2 mashed very ripe bananas for 1c. oil instead. Turned out very well! Other changes: 1c. white sugar and 1c. brown sugar (adding the white sugar to the peaches at the very start to draw out the moisture), and used 3c. peaches instead of 2 (~ 4 peaches).

Tasty recipe, for sure! I use a whole red pepper, throw in some red onion, and use 1/4 cup cilantro. Love to serve this over lightly seasoned mahi mahi or ahi tuna.

Greek Style Potatoes

These were great potatoes. I served them with the souvlaki, greek salad III and tzatziki sauce II recipes from this site (with baked pita bread, of course!) Everyone loved my first attempt at a Greek meal.

Lemon Cooler Cream Cake

This is my new favorite cookie recipe. However, I changed it a little... I decreased the total chocolate chips to 1.5c and increased the amount of nuts to a total of 1.5c.

Key Lime Pie VIII

I've never had key lime pie before I made this one so I don't know if it tastes "right" or not, but it's fabulous. Nice and tart. I love this recipe and have made it over and over.

Garlic and Herb Lamb

Excellent. Best lamb recipe I've found. I actually use it on lamb chops as opposed to the whole roast, and fry them in hot oil just to sear the outsides and keep it nice and pink on the inside.
