Grilled Salmon with Bacon and Corn Relish

This recipe was a good as any meal I have ever eaten out. I added a little brown sugar and paprika to the salmon with the salt and pepper. I did not put cayenne on the salmon though, but did put a diced jalepeno in the relish. I made a coconut lime rice and grilled asparagus for the sides. It all worked together and was fantastic. I can't wait to make it for company!

Spanakopita (Greek Spinach Pie)

I've made this a few times now, and it's always well received. I use a few more sheets of phyllo Since I just can't do it t like the recipe explains. I just put sheets of phyllo in the pan, put in the spinach mixture, fold over the ends and add more phyllo sheets on top so it's all covered.

Almond-Raspberry Meringue Bars

Mary Oppenhiemer's Butter Cake

This cake recipe is great. After reading the reviews I tried it because I wanted a cake that would hold its shape for and April Fool's Day spaghetti cake. It was perfect, sturdy but fluffy, moist and rich tasting. I covered it with a buttercream frosting and strawberry jelly (for the spaghetti sauce) and cocoa-krispy treat meatballs. I can definitely see this cake used as a wedding cake!

Easy Morning Glory Muffins

Theses were amazing. So moist and tasty. I did most of the changes other reviewers suggested: I used 1/2 cup of applesauce and 1/2 cup of crushed pineapple for the oil, and I used 1/2 a cup of whole wheat flour and 1 1/2 cups of all purpose flour. I also cut the sugar down to 3/4 cups of brown sugar. I mixed it all by hand. The recipe made 18 beautiful, pretty healthy, moist and yummy muffins. I did not use muffin papers and used none-stick spray in the tin. Pulled out of the oven after 20 minutes. Thanks so much!

Moist Passover Apple Cake

This is a very good dessert. I did as most others and made 1.5 times the dough and used 3- 4 very large apples. I baked it in an 8x8 disposable pan for 50 minutes. I actually made 3 of these to give away, but couldn't get enough matzah cake meal, so ended up grinding matzah meal in the blender until it was very fine. The cakes came out absolutely beautiful and tasted great.

Apple Cream Coffee Cake

This cake came out beautiful. It held it's shape well and was a pleasure to cut and eat. I made it to the recipe, except I used oatmeal instead of walnuts and 1/2 cup of brown sugar for the topping and 1/2 cup brown and 1/2 cup white sugar in the batter. Oh and after spreading the bottom half and putting on the apples and 1/2 the topping, I added 1 Tablespoon of milk to the batter to help spread it easily. I also did not have a tubed spring form, so put it in a round spring form, and after 40 minutes of baking, I shut off the oven and kept it in for 15 minutes more. The color was perfect and it cooked through nicely.

Meatloaf with Fried Onions and Ranch Seasoning

I have tried so many different Meatloaf recipes, that my family never knows what to expect. But everyone said this was the best meatloaf I have ever served. Moist, flavorful and it held it's shape. Although the canned fried onions don't stand out like you think they will, they add a nice soft onion taste to the meatloaf. I also used the whole ranch packet, because I never use up the halves. No one drowned their piece in ketchup like they usually do, in fact no one even used any ketchup. This will be my go-to meatloaf recipe.

Corn Spoon Bread

I brought this to a potluck and while sitting at the table a murmur started around the room. "Who made the corn?" When people found out I made it, lots of people requested the recipe for Thanksgiving. I made the recipe as written, but doubled it, and added 1 teaspoon of vanilla and used 1 stick of butter. I cooked it in the crockpot for 4 hours, then put it in the oven at 350 for about half an hour to brown the top.

California Roll Salad

This is one of my favorite salads. It is so easy, different and tasty. I use the wasabi paste in a tube from the oriental food aisle or sometimes by the fresh salad section. I also add some sugared ginger sprinkled on top, and some grated ginger in the dressing. Sushi is all about the ginger for me! I usually don't mix in the lettuce, but put the salad on a bed of lettuce for people to take if they want. I also tried adding the sushi seaweed sheets chopped up and mixed in- did not like it at all.

Pink Ladies

This was a fun, different recipe. I made it for my husband to bring to work on halloween when he dressed up as a Grease "Pink Lady." I only put the 2 Tablespoons of cherry juice in the frosting. Interestingly kids said it was very cherry-y, but most adults just got a hint of cherry. They were very pretty and not hard to make. A little goes a long way.

Alice Chicken

We love this chicken and think it tastes just like Outback. Who would believe that marinating chicken in Worcestershire Sauce would make such a difference! we cooked the chicken on the barbeque (just because living in Florida we grill all the time!) and added cheddar cheese. If you go looking for leftovers, they are always all gone, no matter how much we make! Just wish they were a bit healthier!

Double Caramel-Pecan Cheesecake Bars

This cheesecake was yummy and extremely easy to make. I made a mistake in measuring, so ended up having to double the recipe, which was actually a good thing because it was gone quickly when my husband brought it to work. I ended up making a 9 X 13 inch rectangular pan and a 7 X 11 brownie pan. They came out light and tasty. I did use the melted caramels in the cake, but drizzled caramel sundae sauce over the top.

Cookies 'n' Creme Fudge

My husband and I thought it was too sweet, but all the kids loved it. My daughter brought it with her while helping at the school play and it was gone in minutes with everyone saying it tasted just like the Cookie and Cream candy bars that they use to buy. I live in Florida, so good thing it was eaten quickly because it melted if out of the fridge too long.

Asian Orange Chicken

Made this pretty much to the recipe, except that I doubled it, used boneless chicken thighs and added a pack of mixed frozen broccoli, cauliflower and carrots. I fried the chicken in batches, and when done put them in a 350 oven to stay warm and crispy. With 3 teenagers, by the next morning there was not a piece left. They all exclaimed how good it was - even better than Chinese takeout.

Southern Moon Pies

I usually bake at least once a week, usually 3 or 4 things at a time. These are my all time favorites! They are so easy to mix up and bake. They are pretty quick to put together and taste so good. The chocolate cake part is not very sweet, but the filling is, so each bite is heavenly. They taste just like a Devil Dog to me. I use parchment paper, so I can remove them when done cooking, and then use the baking sheet again. I always plan on trying a variation, but then I remember how good they are with the original recipe, that I just keep making them that why. My only problem with them is that when I know they are there, I want to eat them!

Rich Herb and Lemon Chicken

My family really enjoyed this. I followed other reviewer's suggestions and reduced the lemon juice to the juice of 1 fresh lemon, so about 1/4 cup. I also added 1 cup of sour cream instead of the 1/4 cup. It was perfect, not too lemony, but with a definite lemon taste and very creamy. We enjoyed it over penne.

Greek Honey Cake

Yummy! Yummy! This cake was so good. It was moist, rich and fluffy! I made it exactly to the recipe, it was easy, fast and yummy. Even the clean-up was easy. The only problem I had was trying not to eat too much!
