Easy 'Charro' Beans

Reviewed: Feb. 11, 2007
I always make refried beans, but this was an awesome recipe. All I did was in the evening, I used dried beans in a crockpot, added all the ingredients, except the whole garlic cloves (I used minced garlic instead) and I added a can of Rotel, other than that I followed the recipe. I cooked the meats and added them to the crockpot and let it all cook overnite. Added some salt & garlic salt the next day and it was ready for lunch. Ate with cornbread (Golden Sweet Cornbread Recipe) and another day mashed them for some burritos. WONDERFUL!

Green Bell Peppers stuffed with Tomato Lentil Couscous

Reviewed: Jan. 27, 2011
The stuffing inside of the bell pepper was the best I have had so far. My whole family loved the stuffing. The bell pepper was really crunchy, which we don't prefer. I will probably add a little bit of water to my meat mixture and cook longer, for probably an hour at 350 degrees next time or follow anothers advise and boil for 4 minutes covered just to soften up a bit. Plus, if it is cooked for an hour, make sure to add the cheese on the last 20 minutes. I did not use a cut-up bell pepper in the mixture and I substituted ground beef for ground turkey. Really good!

Mom's Best Spaghetti Sauce

Reviewed: Oct. 27, 2011
I gave this recipe 5 Stars based on the following from a previous review from Debra. I made a big batch and froze 1/2 of it. I also took the advise of another and omitted the white sugar and added brown sugar instead. Delicious! Per Debrah, "I deleted the mushrooms, parmesan cheese, and the baking soda. I add a little more garlic then this recipe calls for and NO water. I also add oregano to mine. When cooking it is important to cook the onions and garlic in some olive oil first. This brings out the flavor. I also add the fresh parsley basil and oregano (chopped), and salt and pepper to that first and cook a few minutes. Then I add the whole tomatoes and the juice in the can, very important to take your hands to them and crush them a little. I let that come to a boil first before adding the sauce. After adding the sauce, I simmer and let it cook for 3 or 4 hours, stirring occasionally with the lid partially on. I also add additional seasoning as I taste and go along. What really turns the sauce unbelievably awesome is that I make meatballs seperately in a frying pan and once they are cooked I add them to the sauce during the last hour. WOW! gives the sauce such an awesome flavor."

Mock Chicken Fried Steak

Reviewed: Oct. 13, 2007
This was good...but was even better when I toasted some hamburger buns and put the chicken fried steak on it with some cream gravy topping. Now that was good!

These came out good, but they are so rich that you can't eat a lot. I think that this would be a great snack for the hollidays.

Kat's Alfredo Potatoes

Reviewed: Oct. 16, 2007
Okay, I took a little bit of everyones suggestions and did the following: Use pizza blend cheese to replace swiss cheese. For 8x8, use 6 potatoes and cut milk in 1/2. Sprinkle some liquid smoke, add 1 tsp. of garlic powder and cook at least 1 1/2 hours. It came out wonderful and I wish I had followed anothers advice to sprinkle cheese on top the last 10 minutes of cooking. Was not disapointed with this one.

Anniversary Chicken I

Reviewed: Apr. 14, 2011
I marinated the chicken in teriyaki sauce overnight then before putting it in the oven I put a teriyaki glaze over the chicken. It turned out with a great combination of flavors. I did not use the bacon because we did not have any, and it still came out wonderful! I also followed others suggestions and added the chese during the last 5-10 minutes of the baking cycle.

Monkey Bread I

Reviewed: Feb. 9, 2008
I really wanted to give this a 5-star, but it was SO SWEET. I think that I will put 1/2 of the butter/brown sugar topping on it next time. And trust me, I love sweet and this was too much for me.

Chocolate Trifle

Reviewed: Jul. 1, 2007
This was super rich, but I followed some of the advice of others, and instead of folding cool whip into the pudding mixture, I whipped 1/2 a pint heavy cream for 10 minutes and then folded into the pudding mixture. I also drizzled caramel (the kind for ice cream) over the brownies as I was layering and topped the dish off with heath toffee pieces. This was a fun and yummy recipe...thanks for sharing it.

Skillet Ham, Cabbage and Potatoes

Reviewed: Jan. 23, 2009
I really loved this recipe! I cooked with 1 can of chicken broth instead of water and I cooked the ham with the onions and cabbage the entire time so it could release its juices. My daughter loved it and so did my parents.

Golden Potato Soup

Reviewed: Jul. 23, 2007
Okay, I do not know where I went wrong, because the taste of the soup was AMAZING. Very good! But this was no soup for me...It was very thick, the potates were over-cooked and when I went to put up the leftovers, it came out in a glob (very thick). I read some reviews and I don't know where I went wrong :(

Carnitas Filling

Reviewed: May 27, 2013
I've never had carnitas filling before (I think), so the recipe came out a bit bland...BUT with other's recommendations, I revamped the recipe with 1 teaspoon of cumin, 2 TBSP adobo seasoning, a shake of red crushed peppers, 1 TBAP Sazon de Coxa con Achoite, 1 TBSP turmeric, 2 TBSP garlic powder, 3 low sodium beef broth cubes and when finished squeeze lime over top and sprinkle w/x-tra adobo seasoning. This made a world of difference. I made my own refried beans and added this meat mixture to the burrito as a filling with cheese. Froze these to make as a quick meal for kids/husband over summer.

Stuffed Zucchini with Chicken Sausage

Reviewed: Nov. 4, 2012
Made this as a side dish for a dinner party. We all really liked this. I cooked the zucchini in oven for 10 minutes with olive oil before adding remaining ingredients and used 1 tsp of dry basil since I didn't have any fresh basil on hand.
