Carnitas Filling

I've never had carnitas filling before (I think), so the recipe came out a bit bland...BUT with other's recommendations, I revamped the recipe with 1 teaspoon of cumin, 2 TBSP adobo seasoning, a shake of red crushed peppers, 1 TBAP Sazon de Coxa con Achoite, 1 TBSP turmeric, 2 TBSP garlic powder, 3 low sodium beef broth cubes and when finished squeeze lime over top and sprinkle w/x-tra adobo seasoning. This made a world of difference. I made my own refried beans and added this meat mixture to the burrito as a filling with cheese. Froze these to make as a quick meal for kids/husband over summer.

Andy's Spicy Green Chile Pork

This came out GREAT! Made my own refried beans and added this to the green chile pork. Made burritos with cheese with this and froze them for the kids/husband to grab as a quick lunch. I made sure to cook out all the juices before using in burrito.

Easy Paella

Stuffed Zucchini with Chicken Sausage

Made this as a side dish for a dinner party. We all really liked this. I cooked the zucchini in oven for 10 minutes with olive oil before adding remaining ingredients and used 1 tsp of dry basil since I didn't have any fresh basil on hand.

Ham Casserole

Mom's Best Spaghetti Sauce

I gave this recipe 5 Stars based on the following from a previous review from Debra. I made a big batch and froze 1/2 of it. I also took the advise of another and omitted the white sugar and added brown sugar instead. Delicious! Per Debrah, "I deleted the mushrooms, parmesan cheese, and the baking soda. I add a little more garlic then this recipe calls for and NO water. I also add oregano to mine. When cooking it is important to cook the onions and garlic in some olive oil first. This brings out the flavor. I also add the fresh parsley basil and oregano (chopped), and salt and pepper to that first and cook a few minutes. Then I add the whole tomatoes and the juice in the can, very important to take your hands to them and crush them a little. I let that come to a boil first before adding the sauce. After adding the sauce, I simmer and let it cook for 3 or 4 hours, stirring occasionally with the lid partially on. I also add additional seasoning as I taste and go along. What really turns the sauce unbelievably awesome is that I make meatballs seperately in a frying pan and once they are cooked I add them to the sauce during the last hour. WOW! gives the sauce such an awesome flavor."

Anniversary Chicken I

I marinated the chicken in teriyaki sauce overnight then before putting it in the oven I put a teriyaki glaze over the chicken. It turned out with a great combination of flavors. I did not use the bacon because we did not have any, and it still came out wonderful! I also followed others suggestions and added the chese during the last 5-10 minutes of the baking cycle.

Green Bell Peppers stuffed with Tomato Lentil Couscous

The stuffing inside of the bell pepper was the best I have had so far. My whole family loved the stuffing. The bell pepper was really crunchy, which we don't prefer. I will probably add a little bit of water to my meat mixture and cook longer, for probably an hour at 350 degrees next time or follow anothers advise and boil for 4 minutes covered just to soften up a bit. Plus, if it is cooked for an hour, make sure to add the cheese on the last 20 minutes. I did not use a cut-up bell pepper in the mixture and I substituted ground beef for ground turkey. Really good!

Crispy Oven-Roasted Rosemary Chicken with Sausage and Potatoes

I used less oil and papertowl blotted some up, so I this may be why my chicken came out a bit drier than expcted. But they taste of the potatoes mixed with the sausage was GREAT! I will probably do the sausage and potatoes again with maybe steak or a different chicken recipe.

Bacon-Roasted Chicken with Potatoes

I have made it 2 ways, which both get 5 stars! 1. I used other's advise and seasoned potatoes in a tablespoon of Italian Dressing (I used Olive Garden's dressing). I didn't have adobo seasoning, so I put some olive oil onto the chicken and used the chives, basil, garlic powder, salt, pepper, paprika, and ground mustard to season it. I took others suggestions and used chicken breast, layered it in a roasting pan which allowed the juices to drip onto the potatoes. This method seemed to dry out the chicken a little bit, so next time I will probably but the chicken into the pan with the potatoes. The potatoes came out GREAT. I chopped up Idaho potatoes into cubes and it was perfect. Ialso only layered 3 strips of bacon over the chicken. This may be why my dish came out a little dry, but I am not sure. This dish is a keeper and the entire family LOVED it! 2. I made the recipe in 2 9x13 dishes. I put 6 chicken legs with 3 boneless/skinless chicken breasts. I layered the bacon over and made my own Adobo seasoning (I used Traci's Adobo Seasoning from this website.) Cooked for 1 hour 10 minutes and it came out AMAZING! Sheesh, this is a good recipe. I also added some corn on the cob and carrots along with the potatoes.

Salsa Chicken Rice Casserole

This recipe was SO good. Be really careful when choosing salsa because the heat on the one I chose was a bit much for my kids, but overall WE LOVED this one. I will for sure be making this again.

Skillet Ham, Cabbage and Potatoes

I really loved this recipe! I cooked with 1 can of chicken broth instead of water and I cooked the ham with the onions and cabbage the entire time so it could release its juices. My daughter loved it and so did my parents.
