Rum-Spiked Horchata

Oh jeeze...I dont even know where to start...I made this one night with carne asada for my bf and I...it was a busy day in the kitchen but well worth it. This was my first time making Horchata. We drank this aaaaalllll night and some the next day, haha. I was a little short on time so only let the rice soak (2nd soaking) for 1 hr instead of 2 and let it refridgerate for maybe 30 minutes and just poured it over ice. This one def. stays in my recipe archives!

Jerk Grilled Chicken Wings

This is by far my favorite wing recipe. So good. Perfect amount of heat. My bf who loves traditional buffalo wings couldn't decide which he liked better. I will be making these often. Next time I'm going to try chicken breats like the other reviewer. Amazing! Can't get enough!

Homemade Fresh Cheese

Super easy. I added fresh cracked black pepper, ground sea salt, fresh chives and minced garlic. Spread on crackers. So delicious!

Churros

These came out great! Much easier than I thought it would be. The dough was pretty firm so instead of making a mess with a pipping bag or plastic bag I just rolled them into balls. Tasted just like a churro!

Brined Bratwurst

These were so good! I will definatly be making it again. The vinegar gives it great flavor. I was alittle hesitant to using vinegar as I thought the flavor might be too strong but its perfect. Its very subtile and tastes delicious. Yum!

Seafood Piccata

This was pretty good. I just used flounder instead of scallops, shrimp, and crab. I added summer squash, sundried tomatoes and spinach (for color) as well as garlic. Then I tossed piccata sauce and flounder into pasta. Yum!

French Egg and Bacon Sandwich

Oh my! this was delightful! I had a loaf of sourdough that I got at the market earlier today. I sliced 2 slices (1"). I added vanilla and cinnamon as others suggested. After I fried my maple bacon I dipped and fried the toast the fried the egg over medium. Mmm...in an attempt to save calories I used smuckers fat free syrup. It's great! Only 25 calories in 1/4 cup..... And you can't even tell.

Paula's Polenta with Mushroom Topping

This came out pretty good but I did make a few changes of my own. I sauteed the mushrooms, onions,garlic and added a couple slashes of white wine and some fresh spinach at the end. When the spinach wilted i topped the fried polenta. I enjoyed this and will probably make it again.

Squash and Sweet Potato Soup

I cant give this recipe a true rating because I made a few changes of my own. I roasted sweet potato (not yam), carrot, acorn squash, onion and garlic in the oven for about an hour. I added this to a pot and heated over low heat with chicken stock for about 20 minutes. I dont have one of those hand blenders (I really should invest in one of those) so I transfered soup into my blender and gave it a 15 second puree, poured it back into the pot and seasoned with grated ginger, red pepper flakes, pepper, dried dill weed and curry powder then let it simmer for another 20 minutes. Poured in some half and half until I got the creamy consistency I desired. Heated for another minute or two. I will definitely be making this again. YUM!

Peking Pork Chops

This was very good. My bf and I both enjoyed this. Only thing I will change next time is use a different cut of pork. My bf and I kept finding little itty bitty bones from the chops...or maybe use boneless pork chops. Anywho, very good....i added cornstarch and 1 cup water to the sauce (after I took the meat out) and let that heat up on high heat (still in the crock pot) to get a little thicker sauce to drizzle on top. Served with steamed jasmine rice and steamed cabbage. Oh and I didnt add ANY extra salt. All that soy sauce is salty enough!

Insalata Caprese II

Im a huge caprese fan! The only difference is I added balsamic vinegar. Sometimes Ill toss in some red onions and avocado. YUM!

Chilled Salmon With Summer Tomato Salsa

So goood! I ommited the corn and red onion (didnt have any on hand so i used a leek instead). I baked the salmon rather than boiling and sprinkled with lemon pepper. After salmon had chilled in the fridge I served it over a bed of fresh spinach and made a sour cream dressing i found on this website. First words out of my boyfriends mouth was "mmmm....mmmmmmmmmmmmm....you gotta make this again"

Garlic Chicken Kabobs

These were great! I put them in pita pockets and we dipped them into the garlic sauce. This was amazing and I am adding it to the Favorites folder so I can make it again and wont forget about it! I served this with grilled veggies from my garden. Healthy, organic and delicious!

Pepperoni Crisps

These were alright. I followed this exactly and turned my back for a couple of minutes after I sopped up the oil and there was smoke coming out of the oven! It was very late at night and I was so worried the fire alarm would go off and wake everybody up. I grabbed the cookie sheet and ran with it outside. They were burnt...so I figured it was my fault. So i trashed them I made a 2nd batch. I sopped up the oil after a few minutes and they immediately started to smoke again and once again I had to run outside with the smoking pepperoni! This time they were NOT burnt after everything was said and done my house was smokey and smelled like pepperoni. I wont make these in the oven again...just not worth it.

These was a great recipe. I doubled the recipe and colored 1/3red the other 1/3 green and left the last portion white. I also rolled my dough into ropes and cut them with a butter knife then tossed them on powdered Sugar. Yum!

New Potatoes with Caper Sauce

These were good. I timed dinner badly the night I made these and was in a hurry to get dinner on the table. The potatoes came out under cooked and were disappointing. It was my fault so I cant rate this recipe unfairly and say it was terrible. It was defiantly my fault. Want to try this again cooked right. Sauce was yummy.
