Whole Wheat, Oatmeal, and Banana Pancakes

Quick tips - I omitted powdered milk, no biggie - Used all whole wheat flour (no all-purpose), still great - Blended quick oats to a flour-like texture and that worked perfectly - Rather than mashing banana, I just threw the egg, milk, banana and vanilla in the blender, mixed it all up and added it to the flour mixture, worked great. I have never been a whole wheat fan, but as I'm getting older and realize how important nutrition really can be, expecially with diabetes in the family, I am trying to just make better choices when possible and using less white flour and sugar is one of the big ones. This was my first whole wheat baking experience and I have to say they were not only much better than I thought they would be, they were FANTASTIC! I will be makng these often. Next time I may add flax seeds and/or protein power to add a little extra umph...probably won't even be able to tell

Butterscotch Bread Pudding

So good! I had a fresh loaf of bread, so I tore it up and threw it in the oven for a few minutes to dry out, but it was wonderful! I prefer mine warm. but this is definitely something you can make the night before and whip out for breakfast.

Slow Cooker Spicy Black-Eyed Peas

So yummy! Taste's like something you would buy at a Southern restaurant. I made this in a pot on the stove. Did a quick soak on the beans, drained, then made the recipe in my pot and simmered for about 1 1/2-2 hours. The recipe is great as written, but a I added a drained can of diced tomatoes, a can of chiles, and some spicy sausage, the second time around, and it added just a little more kick.

Crispy Chocolate Log

One of my favorite treats! I will add a handful of tofee bits to the chocolate/butterscoth cips mix just for an extra little crunch. Yummy!

Potato Bacon Chowder

So yummy, and so easy, just how I like it! This receipe deserves 5 stars because one, it is great just the way it is written, but two, you can jazz it up however you want! I added green peppers and corn to the onion/celery saute, then cheese at the very end to mix in. I forgot the salt and pepper, but it didn't even matter. Everyone LOVED it! This is a super-duper-keeper.

Easy Mini Quiche

TO PREVENT SOGGINESS: Flatten the bread with a rolling pin and spread butter on the bottoms FOR FLAVOR: Add crumbled bacon, salt, plenty of cheese, chopped tomatoes, whatever you think would be yummy! FOR AN EASIER, BETTER ALTERNATIVE: Instead of bread, use refrigerated biscuits, smash them flat and put them in the muffin tins. You can still add fun stuff to the egg mixture, but the biscuits bake better and add a little more flavor

Cookie Salad I

Love, love, LOVE this recipe! It's definitely a classic in our area. I added canned blueberries this time and it was even better...almost tasted like blueberrie muffin mix. YUM! I did make it the night before and then added the cookies just before serving, but even the day after that, it was still good.

Belgian Waffles

These were great waffles, but they tasted a little bland. (Of course one you load tghem with buttermilk syrup, fruit and powdered sugar, they were AWESOME!) I made them for a baby shower this morning and they were gobbled up. Like other reviews, I made them the night before and left the batter rise in the fridge. Just a warning, though, put on a paper plate or something because I left it in a 5 quart KitchenAid bowl and it still over-flowed!!

Eclairs II

This is the same recipe that is in my Better Homes and Garden Recipe Book and it works every time! My suggestions: - Just bake at 400 for about 30 minutes, or goden brown and dry. - For the filling, use white chocolate instant pudding and Cool Whip and use pastry bag with long tip to fill rather than cutting off the tips. - For the chocolate glaze, Mix 1/3 cup cocoa, 1 cup sugar in sauce pan. Add 1 teasp vanilla, 1 stick butter, 1/4 cup milk. Boil for 1 minute, then set aside to cool. Dip the tops in the glaze, yummy!

Herb Roasted Pork

This was great! Before putting in the oven, but after putting the herb mix on, brown all sides of the pork roast in a skillet to trap in moisture and give it a yummy, crusty outside. I used miced garlic out of a jar and added some balsamic vinegar to the glaze. Yum, yum! It was the best pork roast I've ever had.

Cream Puffs

So easy! I didn't bother cutting off the top or anything, I just let the puffs cool, then used the long filling tip with my pastry bag and filled it up! Also, for the filling, I made White Chocolate instant pudding and mixed with Cool Whip. They were better than gourmet and SOOO easy! I will be making mini puffs for a chocolate fountain.

BBQ Chicken Calzones

Cinnamon Rolls III

This was my second time attempting Cinnamon Rolls and my first success! They turned out great, and I will definitely be making these again. I didn't have a bread machine, so I just used my Kitchen Aid. I put the yeast and warm water in the bowl and let it get thick. Then I added all of the dough ingredients except for 1 cup of the flour and mixed with the dough hook. When the dough started to form, I added flour until dough was no longer sticking to the sides, and a nice (semi-sticky) dough ball was formed. I then just took out the dough, rinsed the bowl out, greased with oil, and put the dough back in the bowl, covering with cling wrap to rise in warm oven. Turned out great! Also, I just used all-purpose flour and it worked fine.

Chicken Enchilada Soup III

This was great! I fried a few corn tortilla strips to make some crunchy additions for the soup. I also just diced my chicken into small bite-sized pieces before cooking it, and that eliminated the shredding step.

Creamy Rice Pudding

I'd never had rice pudding, but my husband loves it, so I thought I'd try it and this is my new favorite treat! I just doubled the recipe and used 3 cups of leftover instant white rice from from dinner. I also added a little bit of Pumpkin Pie Spice (nutmeg, cinnamon and ginger) just before serving and it was ymmu, yummy! I'll definitely be making this again.

Better Than Sex Cake II

Everyone loved this cake! Even I, not a huge chocolate lover, devoured it. Instead of crushing up heath bars, I just used a mix of Heath toffee bits (in choc. chip section) and mini chocolate chips. So great!

Chicken Pot Pie IX

This is my husband's favorite meal...everytime I tell him we're having chicken pot pie, he is thrilled and tells me to make sure I make TWO (and it's just us!) I use canned chicken and canned veggies, which makes it super easy, and of course frozen pie crusts from the store, and everyone just loves it. You can't get much easier than that!! THANK YOU!

Blueberry Gelatin Salad

I thought this was really good and I took it camping and got rave reviews. My only suggestion would to make sure the cream cheese is softened all of the way and be sure to use an electric mixer to mix the topping...mine was a little chunky and it took away from the flavor.
