Iced Pumpkin Cookies

We loved these! I made them for a road trip...the kids had half of them eaten right after they came out of the oven. I froze the rest so we could take them on our trip later in the week. My husband, who hates pumpkin, devoured them the first day. :) They did freeze well, although I did not try the icing; I sprinkled them with cinnamon sugar right out of the oven instead (we're not big icing fans). I will be making these again and again. My kids now ask for them first. Thanks for sharing the recipe. Super yum!

Bacon-Roasted Chicken with Potatoes

YUM!!! My family loved this....it smelled so good baking. It was an unusually quite dinner table tonight as they happily ate! We ALWAYS eat white meat but I'd bought some drumsticks on sale and tried them with this recipe. My kids LOVED it!!! I had one piece of bacon left over and so I chopped it up and added it to the potatoes/onion. It was wonderful.....and sooooo easy to put together. Thank you!!

Orange and Lentil Soup

Yummy! Even my picky eaters cleaned their bowls. I did not notice a strong orange flavor at all. The soup definitely had a light, fresh taste but still filled us up. I served this with homemade wheat bread and a tomato/mozarella salad. We all have very happy tummys. Thank you for sharing this recipe!!

Whole Wheat, Oatmeal, and Banana Pancakes

Yummy! Tried it w/ the applesauce and our kids gobbled them down! These taste soooo good and are very moist. Not to mention they are healthy! We will be using this recipe from now on for our pancakes. Thank you!!

Soft Sugar Cookies IV

These were great! Nice, soft and buttery, the way I like them. I usually roll these in crushed candy canes, but three little elves got into the candy canes this year. Instead, I dried crushed dum-dums. They turned out pretty well, but mostly because the cookie itself is so good! Thanks for sharing!

Ultimate High Altitude Chocolate Chip Cookies

I live at 6900 ft and mastered most other cookies, but not choco chip cookies. These were awesome!!! They rose well after baking and look like REAL cookies instead of the flat masses I've been making. They taste great, and have the right texture. My kids inhaled them after school today. I will make this (finally!) my new choco chip cookie recipe. Thank you!!!

Pudding Chocolate Chunk Cookies

These have become my favorite cookie! I make them with choco/fudge pudding mix and peanut butter chips. Even my husband loves them and he does NOT have a sweet tooth. These will not last long. Yummy!

Three-Cheese Potato Bake

These were pretty good. And super easy/fast to make. Tonight was one of those nights that I only half planned dinenr and needed a quick and easy side dish. We tend to prefer "real" mashed potatoes, but in a hurry, this recipe was great. I mixed the cubed cheese in and topped the potato mixture with the shredded cheese. My husband and kids ate it up! Thanks for recipe!

Peanut Butter Sheet Cake

I did not make the cake but did use the frosting on some banana oatmeal cake cookies that I just made. The frosting is just delicious! It was the perfect taste/texture to accompany these cookies. Yummy! Now I have to try the cake itself, because if the frosting is this good, the cake must be, too! Thanks for sharing.

Sophie's Zucchini Bread

This is the best zucchni bread recipe I've ever made. It made two generous loaves for me that were so moist and flavorful. I gave one to my mom and my brothers ate it up within the day. The second time I made these, I made them as muffins to put in the freezer so I can pull one or two out at a time for lunchboxes, etc. Delicious!!!

Peanut Butter Banana Muffins

These turned out pretty good. I added 3/4 cup creamy peanut butter instead of the 1/2 cup, and mashed 3 bananas. They are pretty tasty, and a good way to get some healthy type foods into my picky kids! Thanks for sharing this recipe.

Truck-Stop Buttermilk Pancakes

These were delicious! I've been looking for a tastier pancake recipe for a while . . . these are it! I also scaled these back to 4.8 servings, and it made quite a lot! Both my husband and I loved these, and our three kids inhaled them. Saturday mornings are big breakfast days for us, and last night, the request for breakfast was "those new yummy pancakes!" Thanks for a pancake recipe that we love!

Beef Peach Pie

We loved this! I made this out of curiousity---peaches and meatloaf? But it was delicious. It is the best meatloaf recipe I've come across, nice and moist, and a nice twist with the peaches. My husband and kids loved it, and I made it for my parents and they loved it. My father-in-law loves peaches in any form, so I'm trying this for my in-laws tonight. This isn't a particularly fancy dish, but a great deviation from regular old meatloaf and worth a try!!

Pork Chops with Blue Cheese Gravy

I made this last night for dinner and it was delicious!! We inhaled it! Both my husband and I thought the sauce was out of this world. I ended up pouring the sauce over everything on my plate, what an indulgence! Neither of us felt the bleu cheese was overpowering, in fact, we thought it was subtle, but just right. Not too much, not too little, just a perfect taste. I was a little worried at first thinking it would be too intense a flavor, but it was great. And I used 4 oz of bleu cheese. Give this a try, you should love it! And it was so simple to make, too.

Irish Boiled Dinner (Corned Beef)

Delicious! Reminded me of what my mom used to make when we were growing up. My husband loved it and even my little ones gobbled it up. I even got my pickiest child to try carrots tonight! He loves the corned beef the most, though. Thanks for sharing, we'll be making this again!
