Blackened Tuna Steaks with Mango Salsa

this recipe was really good. to offset the overall spicyness of the fish, I added a little blue agave sweetener to the salsa (I also upped the lime juice, mostly because I like limes). I also basted the fish with a little more blue agave & fresh lime juice. The fish is really complemented well by the mango salsa (so should definitely be eaten together!)

Pear and Gorgonzola Cheese Pizza

This is great! I followed other reviewer's suggestions and pre-baked the crust with a little bit of olive oil, white balsamic vinegar, garlic, rosemary, salt/pepper, red pepper flakes and parmesan (about 5 min). My fiance doesn't like walnuts so we omitted the walnuts and topped the pizza with arugula to serve! very tasty!

Giant Chocolate Chip Cookies

Okay so this recipe is pretty good- the flavor is okay (but could use a little work) and using the 1/4 cup measuring cup won't yield GIANT cookies (more like above average). The cookies came out pretty well- I baked them at around 300 degrees for 16 minutes (but our oven runs hot) and they came out perfectly. For my second batch, I used the 1/2 cup measuring cup to get truly GIANT cookies which worked much better.

Jumbo Breakfast Cookies

These are pretty good, though I'm not sure what makes them any different from "buffalo chips"- a cookie w/cereal in. I used 3 cu honey nut cheerios, 3 cu grape nuts, sub'd choc. chips for the raisins, sub'd vanilla almond milk for the water and used pb w/flax seeds. They turned out tasty! not as big as hoped, but whatever. They are a little dry. Next time I think I'll add more seeds (flax, sunflower, etc) and maybe craisins or currants.

Apple Cookies

These are pretty tasty. I took other reviews into account and added homemade applesauce in addition to the apples, and cut the sugar down. I omitted the walnuts/raisins and used butter. Will def. make again if I have spare apples to use up.

Apple Bread

This came out really tasty! I followed the changes of other reviewers (half & half white/brown sugar, milk) and doubled the apples (4 cu). I also added vanilla, homemade apple butter (about 1/4 cu) and omitted the oil. Will definitely make again!

Fluffy Pancakes

I've never had fluffier pancakes! I added vanilla and pumpkin pie spice/cinnamon and we added frozen blueberries! Yum. I also added lemon juice to the milk (with the vinegar). This recipe yields just enough for 2 hungry people (which was perfect for us), but for more people you might want to double it.

Banana Bread VIII

This recipe is awesome! I read the other reviews that said it was a little dry, so I added about 1/2 a cup (give or take) of plain greek yogurt and that worked like a charm! I also added rolled oats & chocolate chips. YUM! definitely going to make this recipe again!

Apple Hermits

These are really tasty! I ran out of walnuts at about 1/2 cup, so I added 1/2 cu pecans. I also omitted the raisins, and following the recs of other reviewers, I added about 2 tablespoons of milk and about a tablespoon of apple cider. they were a hit!

Jumbo Fluffy Walnut Apple Muffins

These are amazing! I followed some of the changes that other reviewers had suggested - like doing a 1/2 cup flour, 1/2 cup butter, 1/4 cup sugar for the topping (for the cinnamon, I substituted pumpkin pie spice and added about 2 tsps?). But totally delicious!

Grandma Ople's Apple Pie

This recipe is fabulous! My boyfriend and I had a surplus of apples (we picked 1/2 a bushel and that turned out to be a lot) so we ended up making 3 pies- all using this recipe! We definitely made some tiny changes- adding more spices to both the apples and the sauce. Also subbing in cider for the water was an awesome choice! The lattice top definitely worked better than the other way though. Definitely a keeper!

Seared Sea Scallops

This recipe was pretty good. As per everyone else's reviews/comments about the crust falling off in the pan, I subbed in panko (japanese bread crumbs) for the flour and dipped the scallops in egg whites before rolling them in the batter and searing them. They came out pretty tasty! I used a little white wine on them while they were in the pan- really tasty and served with lemon & lime juice. I also added parm. cheese to the batter, like one of the other reviews recommended. My only complaint is they were a tad salty- an easy thing to fix!

Chocolate Coffee Cake

This cake tasted really good, but it took forever to cook. We followed the directions totally, but for whatever reason after the full 40 minutes in the oven it was still extremely wobbly. Ended up taking closer to 2 hours to be done.

Chewy Peanut Butter Chocolate Chip Cookies

these were pretty tasty- I used extra crunchy peanut butter and dark chocolate chips and they were a hit. I found them a little on the greasy side and they cooked slightly faster for me (around 9 minutes). But overall good!

French Onion Soup With Browned Garlic

This came out pretty delicious! I like how light and yet still french onion-y this soup is! I followed the previous reviewers suggestions and added 8 cups of veggie broth instead of four and that seemed to have achieved a good balance between broth and onions. I also didn't have any sherry, so I substituted about 1 cup of apple cider + 2 tablespoons of red wine vinegar for it (and it came out delicious!). I also grated parmesan, cheddar and a little havarti (w/dill) cheese over the soup while it was simmering. I added about a tsp each of rosemary and thyme as well. Definitely going to make this soup again!

Rosemary Shortbread Cookies

Interesting recipe, the flavor grows on you as time goes on. Had to use dried rosemary (2 tsps), will have to try fresh next time. Pretty easy to make though!

Spinach Tomato Linguine

This recipe is really tasty! and easy to make to boot! I made this with a basil garlic linguine (and also added some fresh basil to the spinach/onion/tomato mixture) and it was a big hit. I also added freshly grated parmesan cheese with the feta and a little over the top when I served it. Really good!
