Pearl Baked Cream Onions

I already like pearl onions, so it was pretty good, but very heavy. I could only eat a little bit with my main meal.

Italian Portobello Sandwiches

These were pretty good. I used old world green/black olive and gruyere cheese bread, and added some montreal steak seasoning to the mushrooms and onions for flavor.

Spinach with a Twist

The first bite was really good. The subsequent bites...eh. Later on I lay in bed feeling like I needed to throw up. There was just way too much cheese. This would be good with half the amount of cheese, or even none at all. The diced tomatoes gave enough of a nice taste to it that the cheese was kind of unnecessary, but good for those who like blue cheese like me.

Black Bean and Corn Salad II

This was awesome. Very very tasty, the lime was really good. The only thing I'd do next time is put half the amount of beans and add another avocado.

The Best Veggie Sandwich

This was awesome. The sprouts I think are optional. If you choose to use onions, use the sweeter white or yellow. Red might be a little overpowering combined with the vinegar and oil mixture.

Garbanzo Stir-Fry

This was pretty good. I added a bit of salt and scallions but you can't even taste it. The tomato gives most of the flavor. It's a really healthy and delicious meal. I served it with parmesan risotto but I think something like tomato basil risotto would be a better match.

Basil Pesto Sunshine Sandwich

Doesn't feel like this sandwhich is stacked enough. I couldn't find focaccia so I used some sourdough. Pesto is yummy and the fresh basil was a nice touch.

The Best Lemon Bars

I used the juice of five lemons and it came out delightfully tart, just how I like it. This was fine because I also used an 8x11 pan and so the bottom was thick enough to offset the tartness. The only problem with using so much juice is that when you put the powdered sugar on it tends to mostly melt in by the time you take it out to eat it. I would put the sugar on when it comes out just to give it a little glaze, and powder it again right before serving for the visual effect.
