Trinidad Stewed Chicken

This had a good flavor. Make sure you double the recipe to have some extra sauce. The next time I am going to leave the skin on the chicken to see if the chicken is able to absorb the sauce better.

Salmon Cakes II

My salmon cakes turned out suprisingly well considering this was my first time making them. As a matter of fact, these are the best that I think I have tasted. I also used the garlic mayonaise recipe from the Moroccan salmon cake recipe (ie mayonaise, paprika and a clove of garlic) as a topping.

Trini Style Chicken

THis had a good flavor. I misunderstood the recipe and used boneless chicken breast instead of chicken parts with bones. The chicken was a little dry (probably overcooked). The next time I will try this recipe with chicken with the skin on it. However, I could still taste a good flavor.

Get a Husband Brunswick Stew

I first made this stew two years ago and I still get requests from friends and colleagues for me to make this throughout the year. I substitute ground turkey and turkey sausage instead of the beef and pork. It cuts back on the caloric and fat content. I used smoked turkey sausage and took the wrapping off of it and mashed the turkey sausage meat inside. I blended it in with the ground turkey and cooked it together. I also use mixed frozen vegetable rather than solely corn. THIS RECIPE TURNS OUT BEST IF YOU MAKE IT IN A SLOW COOKER. I allow it to simmer for 6 hours or overnight.

Bourbon Pecan Chicken

This turned out really well! I doubled the ingredients for the sauce to make sure that I had enough left over. I used boneless breasts and made sure that I did not overcook them! I brought some in the office and allowed my colleagues to try. They loved it!

Lisa's Chocolate Chocolate Chip Cake

I have made this cake many times now and still get requests for this cake for parties. I follow recipe generally as directed, however, I use the Butter Fudge recipe cake mix instead of regular chocolate cake mix. I also use milk chocolate chips instead of semi-sweet. I'm not sure if this makes much of a difference, but it comes out sooooo moist, that I'm afraid to use regular cake mix.

Pineapple Cheese Casserole

I loved it! I originally tried this dish when one of my friends from South Carolina's mother made it. I found this recipe and made it for an office potluck! My colleagues were a little skeptical of the dish based on the title, however, they tried and loved it! I've received several requests for the recipe and I am making it for a cookout today. TIP 1: Make sure you drain the pineapple and THEN only add 8 tbsp of the remaining juice. TIP2: It tastes better with only 3/4 cup of sugar.

Baked Ziti IV

I have been making this recipes for the past two years. Always a hit! I prefer to use ricotta cheese instead of cottage cheese. This recipe also works well with ground turkey instead of beef.
