Tofu Parmigiana

This was a great idea, but I did tweak it. I sliced the tofu, pressed the water out by putting it between paper towels with a couple of cast iron skillets on top to weight it down. Then I froze the tofu briefly, then dipped it in flour, egg, bread crumbs and baked it about 15 minutes on each side. I added pepper, salt and garlic powder. I used a jarred sauce (to clean out the frig!) and it has a great taste and texture. I'd eat this again.

Cream Cheese Kolacky

I had a lot of trouble getting them to be the right shape, and they popped open in the oven. The taste of the dough is pretty bland and flour-y. This was a waste of some high-end butter!

Cream-Filled Strawberries

The idea was good, but the chemical after taste from the pudding mix ruined this for me. I think it's much better with a homemade pudding, or flavored cream filling, which is what I ultimately ended up doing for a shower.

Pasta with Kielbasa and Sauerkraut

This recipe has potential, but is lacking something, not sure what. Maybe it was because we used turkey kielbaaa, which lacked the oomph of a beef/pork sausage.

Spicy Chipotle Turkey Burgers

These were very tasty! I used one pepper, but added about 1.5 T of the adobo sauce, so the burgers were seasoned but not what I would call spicy, and I'm kind of a spice wimp. Next time I will use 2 peppers. The burgers were very moist. Other changes made: parsley rather than cilantro, no onion powder or season salt, but added extra fresh onion and garlic powder. I cooked them in the skillet.

No Bake Cookies III

I used just 1 1/4 c sugar and an extra tablespoon of cocoa, so they weren't too sweet and just right. Boiled at rolling boil for about 90 seconds, and they set just fine in the refrigerator.

Pasta With Tuna Sauce

This was a little bland to begin with, so I doubled the lemon juice and added another squirt right before serving. I also had to double the capers, and added black pepper. The sauce was a bit thick for my preference. But, it was easy and quick. I will try again with tuna in olive oil, and double/triple the lemon and capers.

Puttanesca I

I made this for my husband (I hate olives), as he loves puttanesca. He's very particular about this dish, and he said he wouldn't change a thing! I rinsed the capers and olives so it wouldn't be too salty, and used just 1/4 c high quality olive oil, with a drained 15 oz can of crushed tomatoes. Thanks for saving us $12-15 every time he gets a craving! :-)

Lentil Chili

This is a great recipe. I used French lentils, which give it a smokier taste. I also used fire roasted tomatoes, for additional flavor, added garlic powder, and sauteed the onion first. My husband ate it for both lunch and breakfast the next day, he loved it so much!

Butter Chickpea Curry

This is a great curry, and seems versatile. I used no-salt-added diced tomatoes instead of the soup, and Lactaid milk. Perfect level of spiciness for me, but my husband would have preferred more heat. I may have to make two batches next time to accomodate.

Portobello Mushroom Burgers

These were pretty good. I don't have a grill so I broiled them. We ate them on a toasted French baguette, with a triple cream brie. It was lacking something so we added raw red onion, which did the trick. Next time I'll use goat cheese and add arugula.

Peach Cake II

Be careful of cooking time-- mine was done in 35 minutes. Pretty good, but has too much cinnamon. I used 1/2 c oil and 1/2 c peach juice, and 1 1/4 c sugar. Very easy, will try again with less cinnamon.

Beef Stew VI

This was ok-- kind of plain, even after I added garlic powder, merlot, extra pepper, etc. After an hour the carrots still weren't done. It needed way more cornstarch, as others have already noted, to get it to thicken. I won't make this again.
