Cookie Balls

YUMMM!! These are WAY too good and WAY too easy and WAY too easy to EAT!! I used regular Oreos and Nestle Premier White morsels for the coating. The dough was chilled at least an hour when I used the melon baller to make the balls. They stayed together real nicely. I heated the morsels in the microwave with 2 T of vegetable oil, stirring every 15 seconds and returning it to the microwave as it became a little hard. I can't keep my hands off them. Tell me ... do you think you can freeze these? I'm really not sure.

Quick and Easy Chicken Spaghetti

OH MY GOSH is that good!! I used one can of regular Rotel, one Cream of Mushroom soup, one 4 oz jar of mushrooms and shredded cheese. Wish I had used low fat cheese and less cheese in order to lower the fat content ~ next time. I also used Quinoa spaghetti instead of regular spaghetti to get away from the gluten. It was really awesome. It's in my favorites for sure.

Chicken Scampi II

I thought it was great. To make a sauce, I drained a can of diced tomatoes (drained) with basil, oregano and garlic and added it to the mixture. Then I added flour to the to part I drained off the tomatoes to thicken the sauce. I didn't have pasta so I served it over brown rice. I will definately make it again. I will also lessen the oil and butter.

Rubbed Down Pork Chops

We liked this recipe. I used 32 ounces of mushrooms and the same amount of Worsestershire and water. I browned then removed the chops adding them once again after the vegetables were cooked. I then cooked the pork for 10 minutes and thickened the sauce with flour to go over rice. Served with fresh green beans and baked bread. Easy to prepare. I will make this recipe again.
