Cow Pies

These are so delicious, been looking for an oatmeal cookie-type recipe with choc chips and no raisins. Didn't have semisweet choc so used half milk choc and half dark choc. Also, I only put 6 on a tray rather than the usual 12 as they do spread (like cow pies do!) Had to cook for about 11 1/2 minutes.

Buttermilk Pancakes I

This was great!! I had spare buttermilk from a previous recipe and decided to make these for my son before school. He LOVED them! They are so easy to make and so quick too! I was going to do what others suggested and add a tsp of vanilla but forgot. It didn't matter though because they tasted delicious without it. I also didn't have any oil so used butter instead which worked perfectly. I don't have a blender but the food processor worked just as well. The pancakes are so light and fluffy, perfect. Thank you.

Excellent taste. Extremely simple to make. It is quite tasty with nuts. Although I wouldn't mind trying it with cashews next time to see how it goes. Tops.

Hearty Beef Stew

Ok recipe for a base but I had to tweak it to make it work. Marinated the beef in the teriyaki sauce over night and omited the paprika. Added an extra potato to bulk it out for starters. Cooked it on high for 10 hours for the potatoes to get soft enough. WAY too much liquid in the recipe. Allrecipes.com got it wrong to adjust the liquid content, this is a stew after all not a soup. Seeing as I had too much liquid I blended 1/2 cup sour cream with 1 heaping tablespoon of flour. Tempered the cream mixture with some of the hot liquid then mixed it all together; which thickened it up to stew quality quite nicely. I also took other raters advice and added some peas near the end. A good recipe to start with but definately needs some help.

Baked Honey Mustard Chicken

Absolutely fantastic dish! I found this recipe on allrecipes.com three years ago and use it as a regular dish now. I have even passed it on to friends who make it part of their regular dish as well. I only changed one thing: I use thighs instead of breast. I know it's a bit fattier but I personally think breasts are way too dry. My only regret is not posting the review earlier!

Grape Jelly

This recipe is so easy to make, great for a beginner. Although at the time of my making it, the recipe did not state when to add the water. I just disolved the pectin in it before adding it to the grape juice. I also did the plate in the freezer trick to ensure it was ready. Place a plate in the freezer during cooking, when sugar is disolved take the plate out and drop a half teaspoon of the jelly onto the plate. Wait one minute and push it with your fingernail. If it wrinkles, it's ready to jar! Great recipe!

Lamb and Winter Vegetable Stew

Oh my gosh this was so tasty! Although I did tweak it a little to suit my personal taste. I'm not a big wine fan so reduced it by half and incresed the broth to make up for it. Not a hug celery fan either so I reduced that by half too. The sour cream = brilliant! This dish is so great it'll be a regular this winter! Added some biscuits on the side for a perfect compliment.

Banana Snack Cake

Absolutely delish! Used dark choc chips so it wouldn't be so sweet. If you want to turn it out onto a wire rack for cooling or icing, do not put choc chips on top. Will be making this for son's birthday cake and icing it with lemon creamcheese icing. What a suprise it will be when it's cut - not the usual choc or vanilla cake inside!

Chocolate Pecan Pie II

Great recipe. Although I used half of milk choc chips and half of dark choc chips. Came out super rich so I would suggest some cool whip or vanilla ice cream.

Sweet Corn Bread

This recipe is great. I live in a country which does not sell Jiffy premade mixes and needed cornbread for my stuffing on Thanksgiving. This did the trick! Although I increased the sugar to 1/2 cup. And the sour cream (I used extra light) made it so moise. Perfect!!

Strawberry Jam

Fantastic recipe! I really needed a recipe withough pectin because you can't buy it where I live. This is great. Although I did puree the strawberries instead of mashing because I don't like chunks of fruit in my jam/jelly. The plate in the freezer trick... genius!

Chicken Kiev

This was quite easy to make although I couldn't taste the dill. Perhaps add more dill to the flour mixture next time. Also, I used pre-crushed corn flakes instead of bread crumbs which made it very crispy & yummy. More garlic wouldn't go astray. This recipe has definitely made it into our family's usual recipe box!
