Luscious Chicken Casserole

This was good, but it did not come out like I expected from the reviews. This recipe is more like a coated meat with cheese and fried onions than a casserole, so you definelty need side dishes.

Serious Herb Cheese Spread

This is good stuff. I am not sure where I originaly found this recipe, but i have been making it for a long time. Since it is "seriously herby" I use it to stuff veges. Like hollowed out cherry tomatoes and radishes, celery, snow peas, and cucumber rounds. Every time I make them people ask me for the recipe.

Baked Zucchini Chips

These were great. Quick, easy and low calorie. I also add garlic powder to breadcrumbs. To make them crispy spray tops with cooking spray before putting in the oven. After you turn them over spray the tops again. They will be crispy on both sides.

Curried Meatloaf

The flavor was great. I chopped half of the peanuts and broke to rest into halves. The whole halves gave it a nice crunch. The loaves were very most inside but a little hard or dry on top. The next day I made a glaze for the tops of the left over loaves. Staying with the flavors in the recipe, I melted a 1/4c. apricot preserves (I did not have apple) with 1t of peanut butter, 1t ketchup, curry and garlic powder to taste. When reheated with the glaze, the top was nice and soft. Next time I will add the glaze to the top during the last 5 minutes of cooking. Will definelty make this again.

Pineapple Chicken Delight

This was quick, easy and had a great flavors. I used both red and green bell peppers and 1/2 an onion sliced longways. I also used chunk pinapple and combined all the veges together then put them on top of the chicken in a dutch oven pot with a lid. Also added garlic powder on the chicken. As another review said you could cut the chicken with a fork. Will definetly make this again.
