Silver's Savory Chicken and Broccoli Casserole

The best casserole that I have made from this site. I was afaid we wouldn't like it, since we like very spicy foods with lots of flavor, but this was great & very simple. After reading the reviews I made a few changes. I used fesh broccoli, we don't like frozen (to many stems) & used swiss & cheddar. Instead of layering the ingred., I mixed them all together w/ 8oz grated swiss cheese. Then I doubled the sauce & poured it over the top, finishing w/ the grated cheddar. Wow. I love to cook & try different things so we rarely eat the same thing twice even when its really good, but this is definetly something I will make regularly.

Yummy Pork Chops

Very good & tender. I did change the way I cooked them. I don't have a skillet large enough to cook 6 pork chops at one time so I baked them in the oven at 350 for about an hour. Before putting the chops in the baking dish I sliced a big onion & laid the rings on the bottom of the dish, put chops on top & pour the sauce over all of it. When it was done I took the chops out, poured the onions & sauce into a pot & reduced it by half. The chops topped with the onions was so good. My picky boys even ate the onions. Thanks for the recipe.

Dilly Chicken

This is really good and easy to make. Next time I make this I will mix everything toghether and then pour over chicken. I think it would be better that way. Great recipe.

Spicy Garlic Lime Chicken

I made this a few weeks ago and before posting my review I looked at the posted reviews again. How ironic that Constance did the exact thing I did. We like things very spicy and with lots of flavor, so I cut my chicken breasts in strips and doubled the seasoning. It was wonderful. A great change from my usaual Tony Chachere's sprinkled on chicken. I am going to make a big batch of the seasoning mixture to keep on hand for quick seasoning. Thanks for the recipe.

Fried Green Beans

These are pretty good. I love lemon, but I still left out the zest. I used about six cups of green beans and they were still a little greasy for me. I make what we call green fries which is very similar to this. I use uncut long green beans, placed in a baking dish single layer then sprayed with olive oil cooking spray and sprinkled with course ground salt and fresh cracked black pepper. Then I bake them at 400 for about 20 min. As I remove them from the oven I squeeze fresh lemon over the green beans and toss. This is still a good recipe for a change up every now and then. Green beans are my favorite vege (I could eat them every day), so its great to have a bunch of recipes for them.

Fried Cabbage Texas Style

I'm from Texas & my grandmother used to make foods like this when I was growing up. I made this with pork chops and cornbread. I don't really eat foods like this anymore, so the bacon grease was a little overwhelming for me, but the guys in my house absolutely loved it. They both had seconds. I usally have to beg to get them to eat even one serving of veges. The only thing I changed was adding more japs, we like things very hot& spicy. I will definetly be making this for them again & again.

Sweet and Spicy Meatloaf

This was really good. To keep the meat from getting to wet drain the tomatoes first. I used hot bar-b-que sauce because we like things very spicy. I made the meat into six 4x2 loaves instead of one big loaf, they cook in about 25-30 minutes and each person gets their own. Also I made a well in the top of each one and filled with a mixture of sour cream and picante sauce and then topped with cheese during the last 5 minutes of cooking. The people in my house gave it a thumbs up.

Roasted Garlic Mashed Potatoes

We liked these alot. Next time I will use another reviewers suggestion and roast 2 heads of garlic. We love garlic. My garlic was over cooked too, so next I will keep an eye on it.

These were so good. The only thing I changes was using evaporated milk instead of plain. One of my guys that I cook for won't eat mashed potaoes, but he loved these. Thanks for the recipe.

Cowboy Casserole

Wow this recipe brings back memories. I don't really eat this kind of food anymore, but it reminded me of when I was a kid and we went to the rodeo cook offs when the trail riders came in. They would make foods like this for everyone to try. I had mixed reviews from my guys that I cook for. I think its because we don't eat foods like this. One loved it and the other not too much but loved the biscuits from the top. I took one reviewers suggestion and made the meat part on the stove and transferred it to a 9X13 dish, put grands biscuits on top, using cooking directions on buscuit can. It came out great. Thanks for the memories.

Skillet Apple Chicken

This was pretty good. Lots of spices which I like. About the garlic salt, I personally never cook with it. I use either garlic powder or fresh, and then salt the food to my taste. If the recipe calls for a large amount of garlic salt the amount of powder used might need to be adjusted to compensate for the missing salt. Enjoy

Betsy's Poppy Seed Chicken

This was really good and easy. I used the garlic cream of mushroom soup for the regular and added some chopped onions to the soup mixture. Since it is hard to get the boys in my house to eat vegetables, I add them to casseroles. So I added fresh broccolli to the bottom of my dish and then poured eveything on top. I also used garlic flavored Ritz crackers. My guys ate the whole thing and asked me to make it again.

Dill and Butter Squash

This is really good, quick and simple. I cut the butter in half and added some butter flavored cooking spray. I love dill so it was not to much for me. This will be a regular at my house.

Crystal's Chicken Saltimbocca

This was incredible. So far it is the best thing I have made from this site. I made 4 breasts and suffed them with the amounts I like of each ingredient, like extra spinach. I used extra wine in the skillet so that I could make a wine sauce after I took the chicken out. It was great toghether.

Crookneck Squash and Tomatoes

This is very good. A nice change from plain steamed squash. Make sure to use the whole amount for the squash & tomato or adjust the sauce. The first time I made it I only used 2 of each and the sauce was over powering.

The Mighty Chicken Stuff

The guys in my household really, really liked this. They each had multipule, mounded servings. I liked it too. I changed the mushroom soup to garlic cream of mushroom soup and added some chopped onion to it. I was afraid there wasn't gong to be enough spices but the flavoring on the chips really came through and they stayed crunchy. I had never bought frozen broccolli before and did not care for it, to many stems. I prefer the crowns, so next time I wil steam some fresh. This was very easy to make and it made alot. Great leftovers. I used a big dutch oven pot instead of the 9x13 so I would have a lid to put on the leftovers. This casserole will be a regular in my house.

Pioneer Potato Candy

I had never heard of potato candy. This recipe came up when I was looking for a potato salad recipe and since it was close to christmas I decided to try it. I am glad I did. It was so good. I have no idea why another reviewer said it wasn't good. Mine came out perfect. I followed the recipe for the dough exactly the way it is printed. It does liquify at first but by the end of adding all the sugar it is a nice dough. One suggestions would be to microwave or bake the potato instead of boiling them. It keeps the potato drier so you don't have to add extra sugar. Also I started with 8 oz of chocolate and figured if I need more I could add it as I went, but that was enough for me. I rolled them into balls and dunked the bottom half in chocolate. It was easier and less messy that way. Then I rolled them in crushed peanuts, mini chips, coconut, and crushed pepperment. Then I set them white side down on wax paper. The toppings you can use is endless. We liked the peanuts the best. Also instead of using vanilla you could add any flavor of extract you like or some rum or brandy. I will be making this again.

Sweet and Gooey Chicken Wings

These are really, really good. I doubled the recipe and served then at a pool party this summer. Mine did not get gooey or sticky but that didn't matter, the meat fell off the bone. The only thing I added was toasted sesame seeds sprinkled on top for presentation. They looked and tasted great. There wasn't even one left over.

Cashew Crusted Chicken

I made this about a month ago before the picture was posted. It was very good. The sauce was wonderful. The only problem I had was that the cashews on the bottom of the chicken got soggy. I had planned to just coat the tops the chicken the next time I made this, but now that I have seen the picture I will cook the chicken with some seasoning and pour the sauce over the top with rice. Thanks for the recipe.
