Black Pepper Cookies

Even my husband, who doesn't like fruit in cookies, loves these! I doubled the amount of citron and subbed allspice and nutmeg for the cloves (sadly I discovered halfway through the recipe that I only had whole cloves), and used freshly ground black pepper. In the future I would use 3/4 or even 1 tsp pepper - I loved the aromatic flavor it provided!

Fabulous Fudge Chocolate Cake

This cake really is All It's Cracked Up To Be, although I followed another reviewer's advice and doubled the amount of chocolate I used. Not like chocolatey like fudgy brownies - more like luscious, fruity, dense and moist chocolate cake.

Banana Muffins II

I switched a lot in the recipe, but it was still delicious! First, I used 1/2 cup white whole wheat flour and 1 cup regular flour; I used brown sugar instead of white sugar; I mashed up two extra bananas instead of the melted butter; and I added nutmeg and cinnamon! Plus, I added about 1/4 cup pecan meal. But they were great! A solid recipe!

Fruitcake Cookies

I liked these cookies but they weren't quite as stellar as I hoped - but I subbed dates and citron for the fruit. Probably pineapple and cherries, like the recipe says, would make a better tasting cookie. They had a nice texture but fell apart easily.

Raspberry Buttermilk Muffins

Yum! Like other reviewers, I doubled the eggs and added vanilla (but no extra sugar). I was using frozen berries, so after I defrosted them, I put the batter in the muffin pan, dropped a few whole berries in, then topped it off with another spoonful of batter. They tasted like berry pancakes! I doubled the recipe and used the other half in a round cake pan - delicious! Perfect, easy, tea cake.

Fluffy Whole Wheat Biscuits

I definitely was not able to knead or cut these out - it was more like a batter until I added an extra 1/2 cup flour, and even then I had to make them as drop biscuits.

Hasty Chocolate Pudding

This makes a great pudding in very little time! I use Splenda in place of the sugar and have omitted the cocoa powder to make a plain vanilla pudding - it's also great served warm over fruit. I usually bump up the cocoa powder to 1/3 cup when I make the chocolate version for extra richness.

Roast Sticky Chicken-Rotisserie Style

Not sticky, but definitely the best roast chicken I've ever made! Very moist and flavorful. I didn't have onion or garlic powder but minced a couple of garlic cloves and smeared them on the bird with the spice rub. It was delicious!

Sandy's Chocolate Cake

Delicious cake but with some major flaws. First, the cake fell in the middle - for my 9" layers and some cupcakes I made with the recipe. Second, I cannot get this cake to come out of the pan! I greased and floured the pans but those layers are staying in. I've made this cake twice now, in different ovens, and I've had the same issues. If you want a beautiful cake, try another recipe.
