Texas Okra Gumbo

Looks like this recipe hasn't been getting any love lately. Youngest decided she wanted to try gumbo, so I let her choose the recipe knowing she couldn't choose any with shrimp (allergies). She chose this one. I will say it was a big hit in this family. The only change I made was to use powdered cayenne pepper as I didn't buy cayenne peppers. If you don't like spice, I would definitely omit this. Oh and I reduced the amount of okra only because I didn't have enough on hand. I would probably make it with just 16 ounces of okra the next time anyway.

Spaghetti Squash Saute

Tried this for the first time tonight. Oldest daughter was sorely against having squash for dinner, but we have a "no thank you" bite rule in the house. After her "no thank you" bite, she realized it was not bad at all. In fact, she liked it so much that she did eat a serving. Will make this again. Only change I made was to cook the squash in the microwave instead of the oven.

Perfect Potato Pockets

11 year old made these while mom was finishing other work. She said they are super easy to make. The taste was very yummy. What a great way to use up some leftover holiday ham. Will definitely make this one again, but will add a little pepper to the potatoes. We did omit the red pepper sauce though, as that just isn't a favorite here.

Texas Hash

I omitted the green pepper. Added a can of drained black beans and garlic. I used southwest style tomatoes (tomatoes with green chilies and cumin) instead of plain diced tomatoes. I also used cheddar cheese because that is what I had. Over all, definitely a recipe I will make again.

Homemade Shake and Bake Mixture

I used this with thin cut pork chops. I scaled the recipe back to half and still had lots left when I was finished. The taste is wonderful. Youngest daughter said this is the best, best, best recipe ever. :)

Golden Sweet Cornbread

There weren't enough good words to describe this cornbread when I made it. I used 1/3 cup powdered milk and 1 cup water as someone else suggested instead of the milk. I also made a double batch so we would have leftovers. It is as good the second day cold as it was the first day warm. Yum!

Easy Coconut Cream Pie

If you are looking for a pie that tastes like pudding with coconut added in, this is the recipe for you. It is super easy to make, but did not come near to my expectation for coconut cream pie. They coconut flavored pudding might help, but it wasn't available in my area, so I made this as the recipe is written.

Pancakes

If you are looking for fluffy, tasty pancakes this recipe isn't it. At least not as written. I did follow the directions as written including using self-rising flour. I ended up with pancakes that were only slightly fluffier than a thin crepe. For the second bunch in the pan we added sugar and vanilla and still didn't improve the flavor. If you are going to make this, you may want to read the reviews and try the suggestions made in them.

Vanilla Ice Cream V

We used this for a recent Girl Scout cook out. I doubled it for the large maker we own. We only took home a very small amount as most people had second. The recipe was so loved that one family was inspired to get their own ice cream maker. :)

Baked Cheese Olives

This recipe was well received at the party I took them to. I did as many suggested and added 2 T water to the dough. Also I refrigerated the olives in dough about 10 minutes. If using queen size olives (or larger), you will need to at least double the dough recipe.

Sourdough Starter I

This is an awesome starter. I also use 3/4c. sugar & 3 T. potato flakes and 1 cup warm water to feed like a few other reviewers. The starter is so easy to get going and tastes really good.

Sourdough Drop Biscuits

I am giving 2 stars for flavor. The taste was great, but these are definately not biscuits. Hubby thought they were pancakes; kids thought they were cookies. I added about a 1/2 c extra flour and still didn't get a biscuit consistancy.

A Very Popular BBQ Sauce

This is awesome. I have found lots of stuff to use it on since making it, including noodles. :) Being a sauce with quite a bit of sugar, wait until later in the cooking to use it if the meat needs to cook for a longer period of time.

Taco Seasoning I

I doubt I will buy taco seasoning again after trying this. I am going to decrease the salt a bit the next time though. My husband used the whole recipe with 1.5 lbs of ground beef and 2/3 cup water. It was great!
