Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

Pork tenderloin is so fast and easy to cook on the grill. The combination of the dry rub and the glaze worked very well together. You could adapt it to suit your own taste. I don't like a lot of spicy hot, so I left out the hot sauce. I also didn't have quite enough apricot preserves, so made up the difference with apple butter. I made 2 and froze one for later.

All-Day Apple Butter

Great idea! I added more spices (allspice & mace). I also had to add lemon juice, as I thought this was too sweet. After cooking all night, I put pureed the apple pieces in my blender and returned it to the crock pot to finish.

Frozen Mocha

Refreshing and a lot less expensive than the coffee or ice cream shops. Can also use chocolate ice cream and/or chocolate syrup instead of the cocoa mix. Add in your own "extras" like chocolate chips, etc. Personal taste preferences make this recipe very versatile.

Outrageous Chocolate Chip Cookies

This is a very good, and quick cookie which appeals to a variety of tastes. I, too, noticed the cookies come off the sheet better if you let them set a couple minutes. I make my cookies a little larger, so have to double the recipe.

Cake in a Mug

I used a chocolate cake mix and chocolate pudding, and used just the egg white with the oil and water. It may not be "gourmet", but I thought this was quite good for a quick "chocolate fix", and my kids can make it up for a quick snack. (Just be careful . . . the mug and the cake get quite hot.) The texture of the cake somewhat reminded me more of an angelfood than a regular cake.
