Tuscan Sausage Ragu

This is now our go-to recipe when we want a red pasta sauce. Make it with the celery! I too would normally add a green bell pepper to a pasta sauce, but I think it's the celery that makes this work so well. The cream really puts this one over the top, but it's delicious even without it.

Slow Cooker Salisbury Steak

So glad I was able to find this recipe again! Like some other reviewers I substituted mushroom soup for the chicken and added sautéed mushrooms and caramelized onions to the gravy. I also used a jar of prepared beef gravy instead of the au jus mix and water. I know I made a lot of changes but this recipe was a great jumping off point and I imagine it's pretty tasty made as written.

Layered Chicken and Black Bean Enchilada Casserole

Quick and easy comfort food, very easy to customize. I added fresh corn kernels and a little more diced green chiles. I was hoping to have enough leftovers for the next day but my husband polished this off. I'm glad he likes it because this is so fast and easy to throw together!

David's Yellow Cake

Yep, this one is definitely a keeper. Wonderful depth of flavor and really moist for a homemade yellow cake. Didn't have cake flour so I did the corn starch substitution, which I always do anyway because cake flour is expensive. Also only had 7 eggs so I used 6 yolks and one whole. I'm so glad I like to level my cakes before frosting, because I got to eat the "tops" of these cakes all myself and it was delicious even without frosting!

Frozen Blueberry Muffins

A quick an easy recipe. Very yummy. We make a lot of smoothies around here so I usually have a bag of frozen blueberries in the freezer. It's nice to have a recipe that uses frozen instead of fresh. I didn't adapt the recipe at all, but they did take about 30 minutes to cook. Will definitely make again!

Eggnog Cheesecake III

I make this every Christmas, and it's always a hit. I usually substitute 3 tsp rum extract for the actual rum, if I don't have any on hand. Be sure to do a water bath to avoid a cracked cake, and I find I can usually shorten the cooking time by about 4-5 minutes; this may be due to the water bath or my oven. Just don't overcook! You want the center to be set, but still a little soft. Thanks for this excellent recipe!

Clark's Quiche

This was delicious. I used half the amount of cheese the recipe called for, and it still seemed decadent. I can't imagine having put all of that cheese in there, which is why I'm only giving it 4 stars. I also omitted the ham and used 1 pound of bacon. I will definitely make this again. With half the cheese, I didn't have any "overflow" using two regular 9" pie pans.

Jay's Signature Pizza Crust

This made a beautiful, tasty crust with a couple of modifications. First, I did have to add almost a cup of flour to make this dough kneadable. I bake a lot of bread, and am used to working with sticky dough, but this was ridiculous! (Maybe in a mixer with a dough hook this amount of flour would work) And it occured to me while adding all this flour that this may account for the lack of taste some reviewers mentioned, so I doubled the amount of salt, and used sea salt instead of table salt. I also baked untopped for 15 minutes, then topped the pizzas (the recipe made 2 12 pizzas) and baked for 10 minutes more. Perfect!
