Fluffy Pancakes

This is a FANTASTIC pancake recipe. Our family uses this as our "default" pancake...in a hurry and need a fool proof, delicious and fluffy pancake, we just pull out this recipe. The vinegar really makes the pancakes! If you don't have vinegar you can substitute the milk for buttermilk and it will have the same effect. Don't press the pancake down with the spatula while it is cooking or it won't be the fluffy pancake it was intended to be. Turn on very low heat and just let them cook and puff up on their own and then flip. They are delicious with Agave Nectar or a berry reduction of frozen mixed berries and sugar. ENJOY! :)

Dutch Babies II

These are a fun treat! to add a little fluff and texture, I whip the egg whites seperately and then fold them into the batter. We make these pancakes on special occasion mornings and top with agave nectar, home made buttermilk syrup or maple syrup...just cannot be beat!

Swedish Pancakes

Exactly like my grandma use to make. I make a berry reduction for a topping with whipped cream or fill them with sour cream and raspberry jam. I always have to triple this recipe when I make it. Our family of 5 devours them faster than I can make them. :)

Russian Pancakes - Blini

I am a very experienced cook/baker. I have made every kind of pancake under the sun as well...this recipe, I have to say, failed terribly. I tried this recipe on two seperate occations. Tried with different temperatures, different pans, different spatulas, different oils/butter/spray and eventually, I just added more flour and salvaged my batter and made delicious Norweigen pancakes filled with sour cream and raspberry jelly. I really wish they would have worked....I will attempt Blini again..but certainly NOT with this recipe.

Chewy Coconut Cookies

These cookies are AMAZING! My family and I cannot get enough (I buy bulk coconut when we go shopping now just for this recipe). I have to stress, however, to not OVER soften your butter. You want it soft, but not too soft (like after sitting at room temp for an entire day). Also, take them out *just* before they are completely done cookies. These make a delicious, chewy (crunchy around the outside) cookie. We add chocolate chips from time to time as well.

Breaded, Fried, Softly Spiced Tofu

YES!! We've found it!! We have been looking for that perfect deep fried tofu recipe...like the one at the Sushi bar...this is it! I didn't soak it in the broth or use spices (next time--I am sure it makes it even better). Even plain, dipped in soy sauce, this is a winner. We will be making this OFTEN. My 3 year old loved helping roll the tofu chunks in the flour/yeast mixture and then gobbled them when they were cool enough to eat! A family favorite for sure. Thanks for the recipe.

Flourless Chocolate Cake I

This was EXCELLENT!!! WOW!!! It's a dense chocolate torte. Not a cake. Don't think "cake" when you make this. It's a cross between fudge, brownies and a torte. It's fabulously rich and kind of melts in your mouth. I put a package of chocolate chips in as well. Boy, was this good!!!

Rhubarb and Strawberry Pie

THIS PIE IS SOOOO GOOOOD! I would give it 10 stars if I could. I didn't change a thing and it was perfect. Tastes exactly like the one my grandma use to make when I was a little girl! I made this for Easter and everyone who ate it RAVED. It was nice to reminisce of grandma!

Indian Chicken Curry II

This is EXCELLENT! I have only had curry while eating out. This was my first time making it and it was so easy and tasted great! I had to add a little more sugar and coconut milk to suit our taste and since we were giving it to our children (who love spicey) we had to omit the cayenne completely. It is QUITE spicy with out it! Thanks for the recipe.

Cardamom Braids

Excellent bread recipe! Fast and Easy and leaves lots of room for creativity. I am usually not a big fan of cardamom but really like it in this as it is really mild and adds a nice hint of flavor. I added minced garlic to the top of the loaf and it is WONDERFUL with the cardamom and instead of white sugar for the top, I used the large granule sugar (turbinado). Highly recommend this recipe! Will be making this bread again soon.

Bodacious Brownies

WOW WOW WOW!! I have made many different brownies from various recipes and this is THE BEST by far. My whole family went crazy over these and they did not last the night. Will be making these A LOT. No need to search for that perfect brownie recipe any longer....I've found it. I did add more butter than it called for, though, and I suggest USING PECANS!!!! We ate it still warm with ice cream and....well....they are excellent!!!!

Cinnamon Raisin Bread I

FABULOUS! This bread is like brioche, only with cinnamon and sugar and raisins. Really really good! I added half brown sugar and half white with the cinnamon for the middle and it turned out really great dessert bread. My family--including my husband who claims to hate raisins--loved this bread and could not get enough! It's a pretty fool-proof bread. Quick to make and has much room for error for those who are beginners. This IS A KEEPER!!!

Hearty Potato, Bacon and Onion Soup

This is a GREAT base recipe! Definitely needs you to add spices to your own tastes (I added garlic, a sprinkle of cayenne and some other various spices). Really great. My whole family including my picky 3 year old loved this. Excellent.

Jan's Chocolate Cake

WOW FANTASTIC CAKE!!! Very moist, very flavorful (make sure you use quality baking cocoa or it will be bland--and be sure to use buttermilk!!!) I used coffee instead of water. A basic cake one could do so much with ! I did a trial run of this cake to prepare for my son's birthday...I will FOR SURE be using it!

Fluffy Chocolate M&M™ Cookies

If they are cooked just long enough, they are nice and chewy. If they cook for the full time they are crispy. It's the melted butter. To make a thicker or 'fluffy' cookie, try softened butter instead. This is a GREAT base batter recipe. Great for sugar cookies too! Really really tasty. Thanks for the recipe!

A really excellent cookie!! I did half butter and half shortening as a preference and made the balls a little bigger than directed. THESE ARE SO GOOD and chewy. YUM. Definitely a keeper.

Delicious Rosemary Bread

ABSOLUTELY INCREDIBLE!!! THIS IS A KEEPER!!! A nice crust with a beautiful crumb! I recommend only making one loaf form this recipe, though...and to avoid the soggyness on the bottom of the loaf, dust bottom and sides of dough with cornmeal instead of greasing the pan. This bread was fantastic. I made it five times in a week. Gave two away and we ate the others ourselves. For the herbs I used sage, basil and oregano along with fresh rosemary (I dumped all the rosemary into the bread and did not sprinkle any on top). The salty taste of this bread makes it sooo good and we just could not get enough. When it's day old, it makes INCREDIBLE toast.

Better Than Sex Cake I

I made this cake twice (just to let you know, I am a very experienced cake maker. LOL!). The first time, everything fell apart. The second time I used a spring form pan which held it all together. I have to say this cake was disappointing. My husband said "I can think of ten cakes off the top of my head that you've made that are a million times better than this". We didn't end up finishing it. I guess there is no substitute for homemade cake.
