About this Cook
I am a 28 year old mother of 4 children (7 y/o boy, Trust Hale and 5 y/o girl, Kaiya Prosper 3 year old girl, Aberlin Sparrow and Everleigh Seren who just turned 1). My husband, who is a medic/firefighter, and I married 5 years ago and ever since then I have been passionate about baking! Nothing brings more joy to a mother than her family delighting in her recipes and asking for more!
My favorite things to cook
Breads mostly. Quick rise and yeast breads. I also enjoy making cookies, brownies, puddings and anything that makes my family say "mmmmm". I love taking a recipe and tweeking it so it becomes a family favorite.
My favorite family cooking traditions
I have the most memories of cooking with my grandmother who is now in heaven. She was the best cook and made up all of her own recipes. Porcupine Balls, zucchini bread, Oven puff pancakes, Stuffed zucchini, home made hot chocolate and lots of others!
My cooking triumphs
I have never made a bad loaf of yeast bread. The first loaf I ever made was a french bread and since then it's only been up hill!
My cooking tragedies
My son's second birthday! The cake turned out beautifully but the frosting I used for lettering melted at the last moment. Thank heavens no one minded the ugly cake....but it sure did taste good!! I have learned to do 'trial runs' of birthday cakes the week before and then give them away to friends or family. This has saved me much grief over the years. :)

Fluffy Pancakes
This is a FANTASTIC pancake recipe. Our family uses this as our "default" a hurry and need a fool proof, delicious and fluffy pancake, we just pull out this recipe. The vinegar really makes the pancakes! If you don't have vinegar you can substitute the milk for buttermilk and it will have the same effect. Don't press the pancake down with the spatula while it is cooking or it won't be the fluffy pancake it was intended to be. Turn on very low heat and just let them cook and puff up on their own and then flip. They are delicious with Agave Nectar or a berry reduction of frozen mixed berries and sugar. ENJOY! :)

Dutch Babies II
These are a fun treat! to add a little fluff and texture, I whip the egg whites seperately and then fold them into the batter. We make these pancakes on special occasion mornings and top with agave nectar, home made buttermilk syrup or maple syrup...just cannot be beat!

Swedish Pancakes
Exactly like my grandma use to make. I make a berry reduction for a topping with whipped cream or fill them with sour cream and raspberry jam. I always have to triple this recipe when I make it. Our family of 5 devours them faster than I can make them. :)
