Chicken Chimichangas with Sour Cream Sauce

This was very good. I was patient and let the sauce cook down. I added some green Tabasco sauce to the sour cream sauce, too. Instead of frying, I brushed the whole thing with olive oil and baked in my convection toaster oven at 400 degrees for 5 minutes, turned over and baked 5 more minutes. So good!!

Chewy Chocolate Chip Oatmeal Cookies

I added 3 mashed bananas and 1/2 c. extra oatmeal. I kept the dough in the fridge and only baked as we wanted them. However, when I made the last batch, there were a couple of cookies left over. Surprisingly, I thought they were better the next day than they were fresh out of the oven. They stayed moist and chewy---just how I like them!!
