Walter's Chicken and Mac

I'm giving this 5 stars for the idea. But I did doctor it quite a bit and ended up with mac and cheese my wife, a mac and cheese lover, said was the best ever. I used a litle cheddar, but also cleaned out my cheese drawer, so added Mexican Queso Fresco, Monteray Jack, Asiago, a brick of mixed English cheddar, and other bits and pieces. I sweated mushrooms celery and onion, added the soup, a beer, chicken and cheese to make the sauce and tossed it with some whole durum wheat gobetti pasta before baking. I put some thinly sliced rolls and shredded Parmesan on top to make a crust. So I changed this recipe a lot, but was so happy with the outcome that I have to give ths 5 stars

Lemon-Orange Orange Roughy

Absolutely delicious simple sauce. I made the sauce with a little marjoram, sage, and a touch of butter in a pot and reduced it a bit. I cooked the fish on the grill for a few minutes per side, basting it with the sauce. Rave reviewsfrom all.

Zucchini Boats on the Grill

This is a good mix of ingredients, and we will make these again. It would have been far to soggy if I hadn't drained and squeezed the zucchini meat in a colander and paper towels. Instead of closing them in foil, I made small foil boats and cooked the zucchini with the top exposed. This made them crunchy and tasty on the top.

Cathy's Banana Bread

This is truly wonderful banana bread! Very moist and delicious. I made this for my parents when they went on a 1000 mile care trip and it was devoured to the last crumb! Thanks.

Simple Country Ribs

Cooking the ribs in BBQ sauce is a great idea. Thanks. I cooked them in a slow cooker and they were fall off the bone tender. The sauce I used needed some kick so I added a little vinegar and hot sauce. After they cooked, the sauce was so good, I reduced it to use it as a grilling and dipping sauce. I've made these twice now, and will make them again.
