Peanut Butter Cookies IV

Reviewed: Apr. 28, 2010
This is exactly what a peanut butter cookie is meant to be. I skipped the rolling in sugar & baked 8 minutes. Easy & delicious!

Delicious! Added garlic and parsely, used red onion instead of shallot; otherwise followed the recipe. MMMMMMMMM...

Curried Wild Rice and Squash Soup

Reviewed: Feb. 22, 2008
My family loved this! I was in the mood for a dish to serve over basmati rice, so I steamed the squash in some vegetable broth adding just enough liquid, then mashing it. I added cubed firm tofu and jalpeno to the onion mixture. I put it all together with coconut milk. Yummy!

Nova Scotian Hodge Podge

Reviewed: Dec. 4, 2006
I came across this recipe as I had some turnips to use....and my family really liked it! I omited the wax beans and added onion- also omited the butter and used light cream. I added parsely, pepper & seasoning salt, and thickened with sifted corn starch instead of flour. I also used vegetable broth instead of water. I pureed the soup a bit so my kids would eat more of the veggies. In all, a big hit!

Butternut Squash Soup

Reviewed: Nov. 22, 2006
This wasn't any more time consuming than any other homemade soup, and came out really nice. I used only one package of reduced fat cream cheese, which was plenty creamy, and veggie broth instead of chicken. I gave it five stars since both my kids, ages 5 and 14 months, loved it!

Mexina Salsa Verde

This was my first attempt at salsa, and it came out great! I boiled the tomatoes whole so the skin peeled right off.

Orzo with Tomato and Fried Tofu

Reviewed: Sep. 2, 2006
This was awesome. My husband & I both loved it. I didn't measure any ingredients- just went by feel, but used everything except that I subsituted fresh majoran for the dried basil.

Dill Sour Cream Potato Salad

Reviewed: Jul. 19, 2006
I made this for a cookout & everyone loved it. I used steamed red potatoes and a handful of fresh dill. I didn't measure the sour cream, but I'm sure it was more. Instead of regular vinegar I used two tablespoons of white wine vinegar. I topped with three tomatoes.
