Perfect Pressure Cooker Pot Roast

I don't have a pressure cooker so I just cooked it in a 350 degree oven for 3.5 hours after browning on top the stove. It is the best I have ever eaten! I would suggest not salting your roast before browning. It is salty enough from the seasonings in my opinion.

Asiago Toasted Cheese Puffs

Mostaccioli with Spinach and Feta

I just made this recipe - I didn't have pine nuts which I think would be a great addition, but I used about 7 cloves of fresh minced garlic and I used canned diced tomatoes with the juice because I was in a hurry. With the addition of the tomato-basil feta cheese I did not even have to add much salt. It is absolutely incredible, great flavor and another recipe I will make over and over again!

Old Fashioned Prune Cake

This used to be a Christmas tradition in our home and I lost the recipe. I am thrilled to finally find it again - it is exactly what I used to make! It is well worth the time and effort.

Broccoli and Ramen Noodle Salad

Minestrone Soup I

A very filling and delicious soup! I altered it a bit, adding shallots from the garden, 1/2 cup of barley, and a pound of the leanest ground beef, browned. I think meatballs would also be good. A great dinner on a cold winter evening. pkincaid

Red Bean Salad with Feta and Peppers

This is FANTASTIC and EASY!! My husband and I ate it as a main dish tonight. I added ground pepper and extra fresh garlic. I may even try artichoke hearts next time, but it is perfect as is. pkincaid

Buttermilk Fried Chicken with Gravy

My mother in law in Louisiana taught me to make fried chicken this way, and everyone tells me it is the best they have ever tasted. I REMOVE the skin first. When my children and grandchildren come from out of town, this is always their main request! PK

It could not be easier! It took me more time to find a grocery store that carries beef brisket than it did to make it. I would double the liquid ingredients in order to have more gravy - it is so good! PK
