Easy Meatloaf

Reviewed: Jan. 15, 2008
Excellent recipe! I would definitely make this again. I did do a few different things than the recipe call for... I added baby portabello mushrooms, VERY finely chopped because I have to try and hide veggies to get my kids to eat them (I put them in my mini food processor). I also used a red onion and chopped it up in my mini food processor. I used japanese panko bread crumbs which have become the bread crumb of my choice for all my cooking. I followed the advice of others and made additional topping (1 1/2 times) and cooked it for an hour and a half. I think next time I will bake at 375 or 400 to decrease cooking time. I also used parchment paper on a lipped cookie sheet and it worked perfect. This recipe is an excellent base to adding different things to your meatloaf. It was so good that my 1 1/2 year old ate enough for 2 adults (and he doesn't eat many things!).

German Pancakes II

Reviewed: Nov. 5, 2006
I used to make this when I was younger but couldn't remember the amount of the ingredients, so I used this recipe. It was bland and flavorless and used twice as much ingredients than should be used. Fortunately I found my old recipe and will follow it next time. Basically, it turned out way to thick and chewy than it is supposed to. It should only be 3 eggs and 1/2 cup sugar and milk.

Husband's Delight

Reviewed: Oct. 27, 2006
Excellent recipe except I tweaked it a bit from reading other reviews... I used 2 cans of Rotel for the tomatoes to spice it up, sauteed the onions with the hamburger, used a can of Cream of Mushroom soup with 1/2 cup sour cream and 3 ounces of cream cheese. I put a little bit of the meat mixture on the bottom of the pan, all the noodles, all the creamy mixture then topped it off with some sharp cheddar and VIOLA, it was fantastic. My husband couldn't stop eating it!

Very good, but needed some extra spices. Easy to make and assemble, just time consuming. I will make it again!

Baked Pork Chops I

Reviewed: Oct. 25, 2006
YUMMY! I added fresh mushrooms and green onions (I sauteed them in the pan after I browned the chops). I also doubled the sauce and glad I did. It makes an excellent dish over rice.

Cathy's Banana Bread

Reviewed: Oct. 25, 2006
Excellent recipe! I love the fact the fat content is lower by using sour cream (I used "light"). The texture is excellent... soft, moist and yummy! The only complaint is it is very bland. I added cinnamon and nutmeg, but not enough. NEEDS SPICES! Also, I used 5 mini loaf pans instead of 1 big pan so I baked it for less time. This is a keeper!

Very good version of hot and sour soup. My husband liked this recipe for both the flavor and ease of making.

The Perfect Chocolate Chip Cookie

Reviewed: Jan. 29, 2006
I was pleasantly suprised by these cookies. I didn't think they would be good without butter, but they were great. The texture is soft and chewy. Next time I would cut back on the almond extract because it was a bit too strong for me, but otherwise good. I still think I like cookies better with butter, but this is perfect when you are out.

Easier Chicken Marsala

Reviewed: Sep. 23, 2005
It was very easy to make but I found it was a bit bland. I added green onions with the mushrooms, which gave it a little more flavor. I think the next time I will add some minced garlic to the sauce for some flavor. My husband liked it better than I did so I'm sure I'll be making it again.

Chocolate Banana Bread

Reviewed: Sep. 2, 2005
EXCELLENT recipe! I used my KitchenAid mixer to blend all the ingredients, which was so easy. I had to bake it longer than it calls for (about 10 minutes), but because I had read previous reviews I knew this was a issue sometimes. I gave some to my neighbors and they were back at my door a few hours later wanting more! My husband now has a favorite banana bread forever!

Chicken, Stuffing and Green Bean Casserole

Reviewed: Sep. 2, 2005
I used fresh french green beans instead of canned, and it was wonderful. It was simple and quick to make but yet turns out like you were slaving over a hot stove all day. It makes a hearty meal and my daughter and husband were fighting over the leftovers the next day!

Hot and Sour Chicken Soup

Reviewed: Sep. 2, 2005
I have made this twice in the past week and love it. The first time I used chicken and the second time shrimp. Both were excellent. I also served it over white rice, which was delicious. I love the fact it is quick to make and flavorful.

Slow Cooker Lasagna

Reviewed: Jul. 31, 2005
Thank goodness I read the reviews before I started. I added mushrooms to the sauce (which was from a jar - which worked great) and only cooked it for 3 1/2 - 4 hours. I started it on high (by accident) for the first 1/2 hour, but I don't think it made much of a difference. It turned out excellent. I'm glad I knew to put sauce on top to keep noodles on top moist. I am definitely going to keep this recipe close at hand.

Baked Ziti IV

Reviewed: Jul. 31, 2005
Very good flavor but didn't seem to be enough sauce to cover all the ziti. I think mixing the ziti with the sauce first, then layer with cheeses would be better.
