Green Beans with Cherry Tomatoes

This was so very simple and my family LOVED this. Used cherry tomatoes from the garden, green beans from market and fresh basis. Used full amt. of butter but next time will half it. Perfect.

Asian Coleslaw

This is the same as Chinese Cabbage Salad I -but that dressing contains no peanut butter and everyone loves it. Made this one yesterday and was a big hit - lots of raves from everyone - basic same dressing except adding peanut butter. Nice addition. I added cucumber, green onion and mixed nuts. Am making tonight again and adding chicken for a main dish.

Daria's Slow Cooker Beef Stroganoff

My family really enjoyed this - as suggested used beef stew meat, whole onion, fresh shrooms, fresh chives, 3oz sour cream, couple dollups of sour cream. I used the white wine instead of water throughout and it came out great. In crockpot for about 10 1/2 hours on low and it was a big hit.

Thai Peanut Butter Chicken Wraps

My family thought this was a good - extremely quick weekday meal. Family liked it. Husband suggested putting ingredients on tostada shells or pizza. I just put chicken in the crockpot all day, shredded and threw it all together.

Italian Breaded Pork Chops

I usually dry out my chops and my family doesn't really like pork chops. However, DH took one bite last night and said WOW. They were really juicy. Tips of dredging in flour first (w/spices), egg wash then 3/4 cup bread crumbs worked perfect. Followed all directions including cast iron fry pan, put in oven 15 minutes and perfect. Served w/green beans and hash browns. Part of rotation now.

Sweet and Sour Meatballs III

This reminded my husband and I of a sweet/sour soup and meatball dishes served at a restaurant in the southern suburbs of Chicago called Scott's Prime Rib. This was really delicious and I will definitely be making again and for family functions too. It was so easy! I used 3 boxes of homestyle meatballs (box said 15 in each - on sale $2/box) and held to the recipe exactly. Put the frozen meatballs in the crockpot with all ingredients. I actually had them in for about 6 hours and they were absolutely delicious - didn't fall apart or burn. Made enough for dinner for couple nights for us and other half going to Mom's. 5 stars for ease of making and taste! I had on sandwiches but dh said definitely w/mashies next time.

Chocolate Brittle Surprise

Made it 1st time for work - 3 people asked for recipe. My son ate half the tin - and it made a lot. I didn't change a thing and even used salted saltines. So easy and good. I'm filling the Christmas tins with these and giving as gifts this season. Cheap and good!

BBQ Bacon Ranch Dip

Brought this to work as I write. I have gotten 3 compliments on it already. Rated it 4 cuz as written, I think it should be changed to 1/2 pkt of ranch and 3/4 cup bbq sauce. I did whip my cream cheese and used green onion instead of pepper. We'll see how many more compliments I get but definitely a keeper in the dip rotation.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

We really enjoyed these. I went easy on the frosting and glad I did as they were very sweet. I used choc cake mix, baked for 20 minutes and perfect. The indent in the middle from frozen (store bought) cookie dough was quickly covered with the frosting. This was quick and delicious!

High Temperature Eye-of-Round Roast

So I didn't have the cook time + 2 1/2 hrs. I like a medium roast so I cooked at 9 min/lb for my 2.3 lb roast. I then put in 195 degree oven. It was done in an hour and 15 minutes. Instead of taking it out and tenting it I turned it off to make sides and that was wrong cuz it got med well. But it was so good and so juicy. Next time I will try the total shut off method or if I have to have the low oven method I will definitely take it out earlier. This was a great recipe. Used Montreal steak too and loved it.

Burrito Pie

I hate when people change the whole recipe... but I took others' advice and double-layered tortillas, used salsa instead of taco sauce and used taco seasoning to brown meat. Husband and kids loved it! It made a lot but leftovers heated well in microwave. Could cut in 1/2 and just use 8x8 pan perfectly. Also, kids don't like spicey and I accidentally used hot salsa and refried beans with jalapenos but I made the whole dish the night before for ease of use and it was not too hot and reheated well (not mushy) so a timesaver for me. Definitely in the rotation!

Apricot Chicken I

Made this last night and my family said to keep in rotation. It was sweet but they liked it. Suggestions from them include, water chestnuts, mushroom, red peppers, onion, nuts. I made asparagus separate and they wanted to know why I just didn't throw it in! Had a loaf of bread w/it. Maybe I'll buy quick frozen ragoons or something else to eat w/it to cut the sweet. Very simple to make. Will also try crockpot next time.

Meat Loaf Pie

I've made this twice now and I'm really surprised my family likes it. It's kind of the KFC dinner bowl idea - everything together. I use a can of golden shroom soup in the meat mixture for more moisture/gravy with peas, corn and mashed potatoes on top. I use the premade mashies sold in stores now. This is really easy and good.

Tiramisu Layer Cake

I doubled as everyone suggested. Mom wants me to make it for Xmas! I made the error of using Baily's instead and it still tasted great. I only had 2 8" pans. Filled one half and filled the other coffee one full and baked it longer. Cut it with a serrated knife for the 3-layer look. We liked having the different colors of coffee and white. I will next time put chocolate in between layers. My grocery store sold a mascarpone which was already Tiramisu flavored. This made such a professional presentation and was easy to make.

Chinese Cabbage Salad I

This is very easy to make. I add a lb of cut up chicken breast and serve with a loaf of bread for main meal. My kids love this one and is also great to bring to someone's house when recipe needed!
