Coconut Muffins

Reviewed: May 3, 2008
This was amazing!... I used 1/2 cup of coconut and 1 tsp coconut extract as some had suggested... I also added 1/2 cup semi-sweet chocolate chips b/c I LOVE chocolate and coconut together...MMMM... I was actually able to make 12 muffins w/ the additions and the streusel topping was enough for the extra... I had no problems with the topping running off... wonderful recipe!

A Good Easy Garlic Chicken

Reviewed: May 2, 2008
My husband and I agreed that this was probably the best chicken recipe ever! I followed this exactly and it was delicious!... I've also tried it with the "gravy" mixture that another review suggested and I thought it was good... but not as good as it is without it. This will be a fam fav!

Lasagna Alfredo Roll Ups

Reviewed: May 2, 2008
I added some chopped cooked chicken breast (about 3 large pieces) to my filling and also used one 16 oz bottle of alfredo on the bottom and another 16 oz bottle for the top... so creamy... I also was able to spread this out into 10 rolls since I added the chicken... will difinitely make again!

Fast English Muffin Pizzas

Reviewed: Apr. 17, 2008
Yummy and so easy!... My 2 yr old daughter loved making her own pizza... I used whole wheat english muffins and they still tasted great... I also toasted the muffins for 5 min prior to putting the sauce and toppings on... sooo good.

Garlic Mashed Red Potatoes

Reviewed: Apr. 12, 2008
These were really good!... I will always make my potatoes like this from now on... I used 1 1/2 tsp of minced garlic instead and I put it in when only 10 min. of boiling was left for the potatoes... I also used garlic salt instead of regular salt... and added a few dashes of oregano...scrumptious!

Best Ever Brisket

Reviewed: Apr. 12, 2008
Great recipe... I added a few ingredients to the rub: 2 tsp ground mustard and 1 crushed bayleaf, and also a little more water to the pan... it turned out great and very tender... I had some "Sauce" left over from the "Sylvia's Ribs" I made the other night and served it with the brisket... awesome combination!

Tunnel of Fudge Cake IV

Reviewed: Apr. 11, 2008
This is one of my favorite recipes... a little time consuming but worth it! I followed the recipe pretty close, except for the baking time: 55 min, and I used chopped pecans... Soooo good! Oh... I had to add an extra Tbsp of milk for the glaze also...

Cake Balls

Reviewed: Mar. 15, 2008
I really liked this recipe... after I formed the balls I stuck them in the freezer for a few minutes so that it was easier to coat them... also the amount of almond bark listed was not enough to cover all of the cake balls... so I rolled the extras in powered sugar and shook off the extra sugar afterwards... my daughter and I liked those even better!! I will be making these again!

Melt - In - Your - Mouth Shortbread

Reviewed: Mar. 14, 2008
Great recipe... I followed it exactly... after the cookies cooled I dipped them in chocolate almond bark and sprinkled some toffee bits, nut topping, and coconut... my family loved these and they looked so pretty on a plate... even without the chocolate and toppings it was delicious!

Crustless Almond Cheesecake

Reviewed: Mar. 14, 2008
Wow!!!... I cheated a little bit and made a chocolate wafer crust... and boy am I glad I did... ummm...I was in heaven! I crushed enough chocolate wafers to make 1 1/2 cups and mixed it with about 5 Tbsp of melted butter and 2 Tbsp sugar... I also added a little bit of graham cracker crumbs until I got the right consistency for a crust... I had to bake it a little longer after I added the sour cream topping- about 15 min total- because it was still jiggly in the middle... oh, I also used a glass bread pan that I sprayed with cooking spray and was able to cut it into 8 nice sized pieces after it was done and cooled from the fridge... topped it with a cloud of whipped cream, a drizzle of caramel, and sprinkled toffee pieces and nut topping... to die for!!!!!

Beefy Rice Dinner

Reviewed: Mar. 14, 2008
Yummy... I changed a few things to make it into a hearty Mexican dip... I added 1 can of Rotel(drained) to the ground beef instead of the green peppers and celery...after that cooked I added 1 can of condensed cheddar cheese soup and mixed it together until it was blended... I also used Mexican style rice instead of beef flavored... served it with tortilla chips- my husband and his friends loved it!

Chicken Spaghetti III

Reviewed: Feb. 24, 2008
Such a wonderful dish!... I boil about 5-6 boneless chicken breast with about 6 chicken bouillon cubes for 45 min to an hour... I also use the whole block of Velveeta (1 lb) and a can of mild Rotel diced tomatoes w/ green chile peppers... makes for a much creamier dish and you can adjust how spicy it is by what type of Rotel you choose.

Peanut Butter Chews

Reviewed: Feb. 24, 2008
This is an awesome recipe for peanut butter lovers!... Like others suggested, I only boiled the sugar and corn syrup for 30 seconds... and I had the peanut butter premeasured... I used about 2 1/2 cups of Chex cereal and 2 1/2 cups of Honey Bunches of Oats cereal... I also went ahead and made the chocolate-butterscotch drizzle...which was awesome, but way too much...I drizzled pretty generously and still had a lot left over... which wasn't bad because I used the remaining mixture to dip half of the drizzled "chews" in... I think the chews were good without the drizzle, but you won't be disappointed if you do decide to make it... My suggestion is to reduce the chips to 1/2 semi-sweet & 1/2 butterscotch... Overall, this was a very rich and delicious treat!

Hamburger Steak with Onions and Gravy

Reviewed: Feb. 20, 2008
Very good recipe... I didn't have any sherry, so I used pineapple juice instead... I also did not have any onions, so I sprinkled the steaks with french fried onions after they were done cooking... awesome!!! Even my extremely picky daughter ate it! I will be making these again!

Award Winning Soft Chocolate Chip Cookies

Reviewed: Feb. 17, 2008
One word...FABULOUS!!! Here are the changes I made after reading the other reviews and experimenting a little: Add 1/2 tsp salt, 2 tsp baking powder, and instead of the tsp of vanilla- use 1 1/2 tbsp vanilla extract and 1/2 tbsp almond extract. I like to bake them for the full 12 minutes...they have such a great texture. Also... try different types of chips (white chocolate, milk chocolate, etc...) Again... FABULOUS! Need I say more?

Tender Italian Baked Chicken

Reviewed: Feb. 17, 2008
This recipe was great... I used what I had in the kitchen: instead of grated Parmesan I used 1 pk of Italian dressing mix... added crushed black pepper to the bread crumbs (per some reviews)...and I doubled the recipe, using half skinless boneless/half bone-in with skin and it still turned out delicious...I did bake it for a tad longer (30 min) and sprayed cooking spray on foil for easy clean up... I will make this again for sure!

Pani Popo (Hawaiian Coconut Bread)

Reviewed: Jan. 31, 2008
My family loves this recipe!... I like to put about 5 tbsp of sweetened condensed milk instead of just 3... I have also tried this with thawed out frozen yeast roll dough and with frozen yeast rolls that were already cooked... both were yummy... definitely try this recipe if you like coconut.
