Pecan Crusted Chicken Salad

Reviewed: Apr. 29, 2008
I've been making this salad for about a year now and always get a thumbs up from my husband when I do (which is rare for salad). This time I made my own creamy garlic dressing with mayo and some cream. I added garlic salt and 2 crushed garlic cloves, some finely chopped basil and rosemary to it. I used to chop up the chicken before putting it on the salad, but this time I left it whole and that worked out much better (all the crumbs went into the salad). Also, I just threw Newman's Own Italian dressing on top and it tasted great.

Playgroup Granola Bars

Reviewed: Feb. 21, 2008
I really enjoy making these for my two year old. I usually bring crackers along for snacks, but now I bring these. They are more healthy and they fill him up faster (and longer). Here are the changes I've made: 1. I reduce the brown sugar to 1/3 cup and the honey to around 1/4 cup. 2. I reduce the oil to 1/4 cup 3. I add 2 mashed, ripe bananas to the egg mixture before adding it to the dry 4. I add a bit of allspice 5. I bake for 20 minutes. The way I make it is not as sweet, but that's good because it keeps me from eating them all but still satisfies my son.

Chicken Breasts Pierre

Reviewed: Jan. 13, 2008
This was amazing! I think now in my top 5 for chicken recipes. I pretty much followed the directions exactly except for a little bit of cinnamon added in. I made this with the "Orzo with Mushrooms and Walnuts" recipe on this site and the two went together wonderfully.

Swedish Cookies (Brunscrackers)

Reviewed: Dec. 23, 2007
These were pretty good. I was making sugar cookies, but ran out of eggs so found this recipe to use up the dough. I added vanilla extract instead of vanilla sugar (by the way, you can make vanilla sugar by just adding vanilla beans to your sugar) and maple syrup. I also added a bit of nutmeg because I'm on a nutmeg kick right now. I did them as drop cookies and they turned out quite yummy! I'll be adding them to some of my Christmas gift baskets this year. Thanks!

Cranberry Pistachio Biscotti

Reviewed: Dec. 16, 2007
I can't say that I followed this recipe exactly, but it was so good that I had to mention it. I ended up substituting dried cherries for the cranberries and almonds for the pistachios. I LOVE almond, so I switched the amounts for the almond and vanilla extract. Yep...I've pretty much devoured the entire batch myself. Thanks for the recipe.

Pear and Gorgonzola Cheese Pizza

Reviewed: Dec. 14, 2007
This is one of my favorite appetizers to make. We have this great restaurant where I live that serves this and this recipe is almost identical. I really like to make my own pizza crust with this. I think it really adds to the flavor.

Wild Rice Chowder

Reviewed: Dec. 14, 2007
YUM! I loved the taste of this soup and did not have to add anything to it. I did use brown basmati rice, though, and I thought it really added to the flavor. This is a keeper.

Tuna Noodle Casserole II

Reviewed: Dec. 14, 2007
I agree that this was a little bland and dry for my tastes. It would probably make a good base recipe. I would add some vegetables next time and probably cut out the cheese in the middle and just put it on top.

Roast Chicken with Rosemary

Reviewed: Dec. 5, 2007
I just love this recipe. We eat it about every 5 weeks or so. It's so simple to make and you can taste the rosemary throughout the chicken. After we are done eating it, I pick the big pieces of meat off, then throw the entire thing in the crockpot, cover with water and a half teaspoon of apple cider vinegar and let boil for 24 hours. The broth is full of calcium and makes a great chicken noodle soup!

Chicken Enchiladas II

Reviewed: Nov. 12, 2007
Wow...these are great! I never crave left over dinner, but I couldn't wait to eat some more of this the next day. The sauce has a great flavor. The only changes I made were that I used mushroom soup with roasted garlic and I added olives to the sauce. I will make these again and again, but maybe try to cut back on the fat a bit next time.

Good Old Fashioned Pancakes

Reviewed: Sep. 23, 2007
I'm sorry, but this tastes MUCH better than Bisquick mix!! I've never actually made homemade pancakes before and I was very impressed with how much better these taste. I did add some flavor by putting in vanilla extract, cinnamon and chopped bananas. I don't think I'll ever go back to pancake mix...

Agedashi-esque Tofu

Reviewed: Jan. 1, 2007
I'm sorry...I had high hopes for this recipe. There's a reason it's called "esque"...it tastes nothing like the agedashi tofu I've had before. My main complaint is the hoisen sauce..the staple of this dish. It's name comes from the dashi soup mix and this ingredient is not even in this recipe! The only reason I gave it any stars is because my friends loved it, though I have a feeling they were just being nice.

Chicken Pot Pie IX

Reviewed: Nov. 14, 2006
I'm not big on pot pies because all the store-bought ones that I've had are so bland. This, however, was very good! I unfortunately didn't read the reviews before I made it, which I usually do. I did add some seasoning to the gravy, but I think I should have added more or maybe some poultry seasoning as others suggested. My husband couldn't stop saying how great it was but he did admit that it was "missing something". I'll try the poultry seasoning next time.

Cherry Chicken Lettuce Wraps

Reviewed: Sep. 6, 2006
I didn't read very far into the reviews, but I was suprised that no one mentioned how much carrot was in this recipe. Every bite tasted like carrot to me and even though I enjoy a carrot or two, I don't want it to be the prodominant taste in a meal. We didn't use the correct type of lettuce also, so it kept falling apart on the plate. I doubt I'll make this again, but if I do...less carrot!!

Garden Fresh Tomato Soup

Reviewed: Aug. 15, 2006
I had to review this recipe since I love it so much! This is the ultimate comfort food. I added an extra cup of tomatoes and some cream because I like a thicker tomato soup, but you can't beat the taste!!
