Marinated Mushrooms II

Sometimes I treat myself to the expensive marinated mushrooms at the deli. Not anymore! These are so good. I didn't find them too vinegary as some other reviewers stated they had. Thank you for sharing your Grandmothers recipe.**Update: I chose a stuffed mushroom recipe to serve at our Christmas dinner. My son and his girlfriend both said they were disappointed as they were so looking forward to having these "scrumptious little babies" I won't replace them again.

French Pastry Pie Crust

I used my food processor to mix the dough. Used 1/2 butter 1/2 shortening. It is very important to keep these cold. Rolling out the dough (always a challenge) was actually not too bad. I used this crust in a peach cream pie recipe which baked @ 400 for 40 minutes. The crust turned a lovely colour and didn't burn at all. I am rating a 4 as I could taste the salt in the finished crust. I will use this recipe again.

Peach Cream Pie

This was the first fresh fruit pie that I have made. I followed the directions exactly and it turned out very nicely. I boiled the peaches for 1 minute then plunged them in ice water to make peeling them easier.

Barbie's Tuna Salad

Very unique. Both my daughter and I enjoy the old mayo celery tuna standby. This we each liked a lot. Interesting flavour combinations. Especially the dill and curry. The proportions are right on. I don't understand all the fuss about too much mayonaise. I thought it was just right. Thanks for this. I will make it often.

Old-Fashioned Cheese Potatoes

I parboiled the potatoes for about 10 minutes, let them cool slightly then sliced them as thin as possible. The dish still took close to an hour to completely cook through. They browned nicely and this receipe made tons. It's amazing how far 6 potatoes will go. These were well enjoyed by the family, especially the male members.

Delightful cookies! Turned out just like the photo. Excellent consistancy. Baked for 10 minutes as directed. Don't you love it when a cookie recipe says "makes 48" and that is exactly what it made. Thanks so much.

Chicken Noodle Casserole I

Although at first I thought this to be little plain, the family went back for seconds and I have eaten the leftovers for lunch. I did add 1Tbsp chicken bouillon granules to the cooking water which added some extra flavour - thank you other reviewers - and I topped first with a layer of sharp cheddar cheese then panko/butter for the top. Indeed a comfy comfort food.

Easy Slow Cooker French Dip

My roast was a little smaller but still was tender. I could not find condensed French onion soup so I purchased a ready to eat (no water to add) brand and added 1/2 a package of au jus packaged mix. I did sprinkle the roast with garlic powder. This was very enjoyable. The dip delicious! Update: After everyone had their fill of this delicious meal I poured the leftover au jus sauce into ice cube trays and froze them. Every time I make a regular oven roast I use 2 or 3 cubes in my gravy. I'm sure this would work well in stews and soups too!

Smooth Sweet Tea

I am really enjoying this tea. Be sure to include that pinch of baking soda. It rounds the flavour and will cut any bitterness from the tea. It's also a good idea to never squeeze the tea bags as you are removing them as this too may cause your brew to be bitter. Thanks for this recipe.

Lemon Garlic Tilapia

Simple Ranchy Breaded Fish Fillets

I really enjoyed these. My fillets were rather large so rather than make skimpy coated ones I only cooked two instead of four. The ranch flavour was suprisingly light tasting. I will make this again. Thanks

Beef Stew IV

It is so nice to know how to put together a warm and comforting stew. I doubled this recipe and followed direction exactly, but added mushrooms a little brocolli, parsnips and fresh tomatoes. I think you cou;d add whatever you had on hand. This was a great meal served with garlic bread. It reheats nicely and I think the flavour improves after a day or two. Everyone in the family enjoyed this.

Split Pea and Ham Soup I

Great simple directions to make a wonderful old fashionedsoup. Even the "pea haters", myself included, really enjoyed this. I used ham hocks which gave nice flavour. Next time I will try yellow split peas and a smoked picnic ham with the bone in.

Barbecue Ribs

This was fun to put together and as a "rib rookie" I must say these turned out fantastic. I boiled the ribs for about 40 min. Marinated them for about 6 hrs. Then baked them in the oven for 30 min. Basting them every 5 minutes or so. The meat was tender and after warming the leftover marinade I used that as a dipping sauce. Yummy!
