House Fried Rice

I think this dish would have been equally delicious just as written but due to using what I had at home and catering to pickiness I altered it slightly. I used 1 tbsp veg. oil & 2 tbsp hot chili oil which gave a nice oriental spice flavour. I used 2 green onions, celery, cooked shrimp, diced deli bought chicken, 1/2 green pepper, 1 diced carrot which I parboiled for 4 min. 1/4C soy sauce and about 2 cups of cold cooked white rice.You may want to use low-sodium soy sauce if you prefer a less salty taste. No one complained here though. I followed the directions as written. Wow! Does this ever make your kitchen smell yummy! I overheard some children playing outside asking where that "good food smell" was coming from. This is an easy quick and quick to clean up recipe that I will continue to make in the future.

Fish Tacos

After too long a wait I finally got around to making these tasty little morsels. I did cut the amount of cayenne pepper down to 1/2 tsp. and that was spicy enough for me. The fresh lime juice in the sauce is so "perky". This is the first battered fish I have tried and I thought it was great. My son finished up the leftovers for a late snack tonight so he must have really enjoyed them. What a nice change from the usual fare!

Brown Rice

I really like rice a a side dish and wanted to try brown for a change. After reading all the reviews I used low sodium broths and used garlic powder rather than garlic salt. Even the butter was unsalted. Needless to say my rice was not salty at all. I did cover while baking. The baking time was 1 1/2 hr. This was very creamy yet not mushy. I will make this again for sure.

Marinated Pork Chops

I've been using this marinade for so long I couldn't remember where I got the recipe from. Good thing I did not try to submit it. That being said, this is a very good marinade. The flavours blend well together and the pork chops always come out juicy. I turn the pork chops over a few times while they are marinating. As another reviewer mentioned. Don't overcook the meat. Thanks for many yummy pork chop dinners! **Update** Many times I 1/2 this marinade when I use chops that are thinner than 1" or I am preparing less meat. I hate wasting something like this that tastes so good.

Broccoli Cheese Casserole

Although not my favourite, the 3 males of the family loved this. The dish is completely empty and I only had a small serving! Very "Cheese Whizzy" but as it calls for that type of cheese I shouldn't have been surprised. I used a full cup of rice rather than the 1/2 called for and the consistancy seemed right. I used fresh broccoli which I steamed till fork tender as I prefer that rather than frozen. The bacon and onion flavour was good. For sure I will make this again as it was really appreciated. Thanks for the recipe.

Crustless Spinach Quiche

Wonderful! I am the only one in my household who will eat quiche so It is mine alone. I followed the directions exactly but had to use swiss cheese with a little cheddar as that is what I had. I also arranged sliced tomatoes and mushrooms on the top. I will make this again as I am sure to crave it.

Italian Dressing Mix

I made this mix up a few months ago and forgot I still had it. I have been enjoying caesar salads lately but tonight felt like Italian. So convenient to just mix this up in the morning and have homemade dressing on the table for dinner.

Cranberry Orange Bread

This turned out a little on the dry side for me. If I make it again I will start testing it at 50 min. Unfortunatly I had only dried cranberries which were ok but fresh ones would be better. The orange zest is very nice in this bread.

Fiesta Fry Pan Dinner

Not bad. I felt it was a little plain so I added some extra taco seasoning, cumin and chili powder. The cheddar cheese on top helped a little too. We also indulged with a couple of dollops of sour cream. I had only regular rice which I prepared seperately then added in place of the minute rice. This was a very economical meal. Both my son and BF enjoyed.

Frosted Sandwich Loaf

Using whatever sandwich filling you like this makes a lovely brunch/shower offering. When I was a girl I remember the bakery would sell coloured loaves which they would slice horizontally for us. We then could have different coloured bread slices as well as different fillings in each sandwich.

Birthday Bones

I took these as a gift for my brother's dog. She really enjoyed them but I think she would just about eat anything! It was convenient to only pull together 4 ingredients. When I rolled out the dough I found it would not stay together- lots of -cracks. I still managed to cut out about 40 small size dog bone shaped cookies but I threw some of the dough away as it was a pain to work with. Thanks for the recipe though Bailie liked them.

After-Thanksgiving Turkey Soup

Very enjoyable soup. I picked all the good leftover meat off the turkey before I put the carcass in the pot. This is my least favourite part of any turkey meal but having this soup as the end result was worth it. I followed the directions and found the consistancy just right.The amount of carrots and celery were good and although I thought that 3 onions might have been to much, it wasn't at all. I may try adding egg noodles instead of rice next time but that is just personal preference. This makes lots so I plan to freeze some to enjoy over the cold winter. Thanks so much.

White Chocolate Raspberry Cheesecake

Wow! Serve in small pieces. This is very rich and very good. Thanks to all the helpful reviewers. I did get a crack but although I take pride in presentation, under the soft candlelight of the Christmas dinner table this cake looked beautiful. Next time I make this I would increase the base crumb amount a bit and perhaps add more than 3 Tbsps. raspberry sauce between batter layers. A recent reviewer suggested to make sure the batter is well stirred to prevent lumps. I should have done that. For those who enjoy cheesecake this is a very flavourful one. Thanks for the recipe.

Gulliver's Cream Corn

I wanted to try something a little different as a vegetable for Christmas dinner. Although I find canned creamed corn yucky, this recipe appealed to me. It was simple and quick to put together as the turkey was resting. I used evaporated milk instead of regular milk and used a little cayenne and a little white pepper. I may increase the cayenne slightly the next time. As promised, it thickened up beautifully but didn't get gloppy as it sat on the table. This was well liked by everyone and something that I will enclude in special future dinners. Thanks so much.

Mouth-Watering Stuffed Mushrooms

I'm afraid this is the lowest I have ever rated but these were not liked at all. The texture of the mushrooms sitting in the little pools of moisture they made in the oven was very odd and unappetizing. My son and his girlfriend actually laughed. I did remove them from the table and had to throw them away.

Cappuccino in a Jar

I just finished a cup. I really liked the fine hint of cinnamon and nutmeg in this drink. All of the flavours blended nicely. I made 1/2 of the recipe this time but I will certainly make the whole thing the next time.

Szechwan Shrimp

I liked this very much. It didn't look or taste very promising just going by the made up sauce ingredients. The garlic and onion really rounded out the flavour. Be sure to double the sauce. I did not completely double the red pepper flakes-used a scant 3/4 tsp-. The spice level was tastable but not burning. My 12yr. old son had chosen to have spagetti instead of this for his dinner but I found him over the fry pan with a fork, eating the shrimp with a grin on his face. This was extreemly fast to put together. I served over rice, squeezed with a little lime juice and sprinkled very lightly with salt. Thank so much.

Better Than Best Fried Chicken

I was not sure how this would turn out using cream of chicken soup in a fried chicken recipe. What a great surprise. I used my deep frier and cooked the chicken for about 9 minutes. As long as your frying oil is at the right temperature the coating should stay on. I stuck to the instructions and ingredients as written and was satisfied with the flavour. Some reviewers have mentioned how terribly messy the prep. was. I used tongs and a fork and didn't find this to be a problem ---but hey part of the fun in cooking is getting your fingers in the mix! I served this with a Caesar salad and asparagus. My family really enjoyed this chicken. I was scolded for not making enough for a late night snack. I'm sure I will make this again. Thanks for sharing the recipe.

Savory Herb Rice

What a simple quick way to fancy up plain rice. My family really liked this. "ummm" they said with surprise upon tasting. I did add a little more chicken bouillon. I will use this recipe many times. Thanks!

Chicken and Cheese Stuffed Jumbo Shells

These were enjoyed. As others have warned they do take quite a bit of time, although they were easy. I too, think a little more sauce is needed not to keep the shells from drying out, mine were fine, but the shells do soak up some liquid when baking and a little extra is required for when they are served. Using all the shells made more than I could fit in a 9 x 13" baking dish so I prepared them and froze the rest. It should feed 2 for another meal which is always nice. Thanks.
