Chicken Encilantrada

This is the greatest and it is fairly easy to make. My hubby requests it on a regular basis. I mix it with rice and we eat it on warm tortilla shells with a dallop of sour cream.

I'm not sure how this recipe would have turned out if I'd followed it exactly. I added green pepper, onion, garlic, parmasean cheese, red pepper and carrots. I also stirred in some shredded chicken. It tasted great with these additions!

Soft Breadsticks

Very yummy, a great side with spaghetti! I did add garlic powder to the tops of these breadsticks before baking. Next time I am also going to try adding a sprinkle of parmasean cheese.

Pancakes I

My hubby and I thought this recipe was great. I used to make my pancakes using Bisquick, but was out this morning and wanted pancakes really bad...so I found this one. I will never buy Bisquick again!! The only thing I did differently was I used just 1 egg white instead of the entire egg and the pancakes were very fluffy!! Made 5 medium sized pancakes.
