Peanut Butter Balls IV

I've made these several times and they are always devoured! However, I have never used the maple extract (I just double the vanilla) and prefer milk chocolate over semi-sweet. I think they taste just like Reese Cups.

Boiled Chicken

Great recipe! I used 1 bag of frozen chicken breasts and added 2 cloves of garlic. I then reserved the broth, divided the chicken into 1 cup potions and stuck them in the freezer for future use.

Cheesiest Potato Soup

Wow! I really enjoyed this soup! I sauteed a clove of minced garlic with the onions, used Yukon Golds, and substituted evaporated milk for the cream, and it turned out great. The cayenne pepper really adds a kick. I also garnished the soup with shredded cheddar, crumbled bacon, and green onion for a "loaded" cheese potato soup. The only think I'll do differently next time is leave bigger potato chunks when pureeing the soup.

Penne with Pancetta and Mushrooms

My family loved it! It was definitely a restaurant quality dish. I substituted evaporated milk for the cream and added some Parmesan cheese to the sauce during cooking. Fresh tomatoes, fresh basil, and shredded Parmesan garnished the top. We will be making this again.

Traditional Pita Bread

This recipe was ok, but not nearly as good or as much like the real thing as Peppy's Pita Bread found on this site. I added a dash of garlic and onion powders for flavor and it would have been very bland without it. I also found this recipe to be rather "doughy", which does not seem reminscent of pita bread to me.

Butter Flaky Pie Crust

I'm a baker, but this was my first try at a pie crust and it turned out excellent! My main concern was flakiness, and it was very flaky. I doubled the recipe & added a bit of sugar & vanilla extract. Only refrigerated the dough for 40 minutes. For filling I used the Three Berry Pie from this website. My husband & I agreed that the crust could use some more sugar to go with the sweet berry pie. I may experiment some, but I know that pie crust baking is a fine science. For novice pie crust bakers I found the following hints helpful: 1. Roll the dough from the middle once, then slightly move the dough clockwise and repeat, gradually rolling the dough into a large circle. 2. After the circle is formed, lightly dust flour onto the dough circle. Fold the dough circle into a semi circle, then fold once more (into a flat cone-like shape). Gently lift the dough into the pan with the "pointiest" angle in the center and unfold. These tips really helped me make my first pie-making experience a happy one.

Black Bean Quesadillas

These were pretty good. I used refried black beans instead of mashing up canned ones and eye-balled everything instead of measuring. I also added chopped tomato and sprinkled on a few broken up tortilla chips. My only complaint is that the tortillas stayed rather soft. Good snack/appetizer.

Mexican Layered Dip

I couldn't stop eating it, but I think it could have been a little better. As advised by other reviewers I mixed the taco seasoning with the sour cream and subbed salsa for the tomatoes. Also forgot the green onions, but wished we hadn't. I would recommend to others to mix the seasoning mix with the beans instead of with the sour cream. My husband thought the brown tinged sour cream was pretty gross.

Classic Greek Salad

Made this recipe for my dad for Father's Day. He's picky about greek salad, but he and everyone else really enjoyed it. However, I did cheat and use Ken's Steakhouse Greek Dressing.

Vanilla Ice Cream IV

My husband made this for a family reunion and it was hit! He used egg beaters because they are pasteurized. Mixed brownies into one batch and mango into another. Everyone loved it and my husband has decided that he needs to purchase an ice cream maker (the one we used was borrowed).

Cookie Balls

Everyone always loves these little balls of deliciousness! I mix the oreo/cream cheese mixture in a food processor, which makes it very easy. By the way, use 1/3 less fat cream cheese, no one can tell the difference & it makes these a teensy bit less sinful! I also chill or freeze before attempting the almond bark dip into the double boiler. However, I just am not very good at the dipping process. That is by far the most difficult part of this recipe. So, to diguise their ugliness I fling some melted chocolate around with a fork for an "accent". After that you can't even tell that I have no dipping skills.

Loaded Tortillas

Great snack! I measured nothing, used black refried beans, Mexican-blend cheese and omitted bacon bits and green onions. I do wish that the tortillas would have gotten a bit crispier, but it was still good.

Slow-Cooker Chicken Tortilla Soup

This was a great and easy recipe. However, it was on the spicy side, but that was my fault. I used southwestern seasoning on the chicken and accidently used "hot" enchilada sauce.

Too Much Chocolate Cake

This cake is awesome! I had to change things a little bit based on what I had on hand. It was so good, I think next time I will stick to the changes I made. I used a triple chocolate fudge cake mix, a 3 oz box of chocolate pudding, only had two eggs- so replaced the other two with 1/2 cup vanilla yogurt, reduced water to 1/4 cup, and just added a handful of milk chocolate chips. Topped with "Satiny Chocolate Glaze", but that part wasn't great, next time will try a different glaze, one that is actually a glaze. Recipe purists will probably complain that this isn't even the same recipe, but I just wanted to share in case someone else was in a pinch and didn't have all the ingredients. A great cake... even though there is no such thing as "too much" chocolate!

Brilliant Sauteed Broccoli

Soft Sugar Cookies IV

We loved these! My husband loves sugar cookies and I do not enjoy the chilling/rolling part of making them... so this was the perfect recipe for us. I added a little bit a lemon juice to give them a lemony flavor. Since there are only 3 of us, I baked a dozen and kept the rest of the dough refrigerated in the bowl. Throughout the week when we craved cookies, we just scooped some out and baked. I made "Sugar Cookie Frosting" from this site to go on top and it was a great combination.

Honey Wheat Sandwich Rolls

I'm torn with this recipe. It makes a delicious looking and delicous tasting bread. However, it just seemed a little heavy for a sandwich, the bread overwhelmed the fillings. However, I have not given up hope. Next time I will use the least amount of flour possible and allow the dough to rise twice. Doing this should make the bread lighter. The only thing I changed about the recipe was replacing some of the honey with granulated sugar because I ran out of honey. I didn't have a biscuit cutter, so I used a baby bowl instead, which worked perfectly. I also only got 9 buns out of the recipe instead of 14.
