Soft Sugar Cookies IV

We loved these! My husband loves sugar cookies and I do not enjoy the chilling/rolling part of making them... so this was the perfect recipe for us. I added a little bit a lemon juice to give them a lemony flavor. Since there are only 3 of us, I baked a dozen and kept the rest of the dough refrigerated in the bowl. Throughout the week when we craved cookies, we just scooped some out and baked. I made "Sugar Cookie Frosting" from this site to go on top and it was a great combination.

Poblano Chile Enchiladas a la Gringa

These were very good. However, I think they would have been much better if I didn't need a drink between every bite! Be forewarned... the heat of poblanos vary greatly! Even though I am very aware of this fact, I kind of ignored it due to other reviewers pointing out the lack of heat and spiciness. I followed the recipe exactly (well, I did broil for a few minutes after adding cheese) and came up with a very hot and spicy dish- and we do like spicy. Next time I will definately test the heat before adding all four poblanos.

Limeade

Made this exactly to recipe. I'm not a fan of limemade, so my husband pre-tested to make sure it was satisfactory. He said it was good, but a little sugary. It was gone by the end of lunch. Something that my mother-in-law and daughter did was add frozen mixed berries to their drinks and it looked nice, as well as a added a new flavor.

Cheesecake Topped Brownies

I have mixed feelings about this recipe. It didn't really set up the way I expected it to. However, after chilling in the fridge a few hours it is delicious although a little gooey. I used caramel frosting which was very good. This is an extremely rich treat, almost (I never thought I'd say this) too rich.

Lentil Soup

Excellent soup! I wanted something kind of like Progresso's Lentil Soup and this was it. I didn't have crushed tomatoes, so I used diced instead (could have blended them, but too much work). Based on other reviews, I used vegetable broth and balsamic vinegar. Forgot to season with salt and pepper- but it didn't need it! My one year old and I loved it!

Tomato Basil Spaghettini

Chicken Salad Balsamic

I decided to try this recipe to use up some leftovers. Initially we didn't think it was going to be very good. In fact, my husband put some frozen corndogs in the oven as a backup for himself! However, after combining the salad with some spring mix greens and sprinkling just a bit of sugar on top, it was delicious! My husband even enjoyed it over the salad greens. Will be making this again!

To Die For Blueberry Muffins

These muffins taste wonderful! They were difficult to get out of the pan without falling apart, so if you want them to look pretty use muffin holders. I used frozen, rinsed blueberries, added a little vanilla, and had to bake for an extra 5 minutes or so.

Honey Wheat Sandwich Rolls

I'm torn with this recipe. It makes a delicious looking and delicous tasting bread. However, it just seemed a little heavy for a sandwich, the bread overwhelmed the fillings. However, I have not given up hope. Next time I will use the least amount of flour possible and allow the dough to rise twice. Doing this should make the bread lighter. The only thing I changed about the recipe was replacing some of the honey with granulated sugar because I ran out of honey. I didn't have a biscuit cutter, so I used a baby bowl instead, which worked perfectly. I also only got 9 buns out of the recipe instead of 14.

Boiled Chicken

Great recipe! I used 1 bag of frozen chicken breasts and added 2 cloves of garlic. I then reserved the broth, divided the chicken into 1 cup potions and stuck them in the freezer for future use.

Mini Cheesecakes I

These went pretty fast at our Christmas party. Used cherry pie topping, melted butterscotch chips, and a turtle topping, as well as leaving some plain. 11 oz. of vanilla wafers was way too much for the crust. I was able to get 72 cakes out of the batter instead of just 48. Update 11/29/08: I had forgotten about this recipe for a couple of years but rediscovered it for Thanksgiving. Again, I got about 72 cakes out of the recipe and again everyone devoured them. What I did differently was use two different packages of "100 calorie" type cookies for the crust and did not smash them. It worked out perfect and was very easy.

Mexican Layered Dip

I couldn't stop eating it, but I think it could have been a little better. As advised by other reviewers I mixed the taco seasoning with the sour cream and subbed salsa for the tomatoes. Also forgot the green onions, but wished we hadn't. I would recommend to others to mix the seasoning mix with the beans instead of with the sour cream. My husband thought the brown tinged sour cream was pretty gross.

Baked Ziti I

This was great! I made it several days ago and my husband is still talking about how good it is. As advised by other reviewers I added a little Italian seasoning, mushrooms, & garlic. I used Provolone rather than Parmesan on top, and Morningstar veggie crumbles instead of ground beef.

Potluck Pan Rolls

These rolls seem to be fool-proof and had a nice texture which just melted in the mouth. However, I found them to lack flavor. The rolls were good, but not anything special.

Cottage Cheese Chicken Enchiladas

I love this recipe! My family has made it 3 times... each time making it a little different and each time it is delicious! My favorite variations include mozzarella cheese, flour tortillas, adding some queso fresco, adding cumin and garlic in place of taco seasoning.

Bean Quesadillas

These were awesome! I did change them up a bit though. I substituted red bell pepper for the green, mozzarella for the cheddar, omitted the corn, and added mushrooms and a little cumin. I had leftover meat mixture from the chicken cottage cheese enchilada recipe from this site, so I threw that in also.

Italian Bread Bowls

Great bread bowls! I added a Tbsp of sugar as advised by other reviewers. I also made 4 rather than 8 bread bowls, but I think I will try 6 next time. They were very large. Although they flattened a little more than I expected, they were still great and served their purpose as bowls. Served with "Cheesiest Potato Soup".
