Following the recipe exactly makes a good template for baba ghanoush, but I had to jazz this up with extra lemon juice, smoked paprika, and a bit of cumin. Not bad, but I know I can find better recipes for this dip.

Carrot Pineapple Cake I

I followed the recipe to the letter except for the addition of a tablespoon of pineapple extract added to the cake batter. This was a huge hit at the work function I brought the cake to! Will make again!

Downeast Maine Pumpkin Bread

I make this all the time for friends and coworkers. The only change Imake is to add a box of Pumpkin Pie Spice pudding (this is seasonal, so stock up!) and halve the sugar. I can't make this fast enough.

Poppy Seed Salad Dressing

Served this over simple mixed greens and didn't change a thing. Very good! I used a micro-plane grater for the onion; next time I'll just use a food processor.

Smooth and Creamy Peanut Butter Pie

I served this tonight to some friends, who all really liked it. I used an Oreo crust, natural (1 ingredient) peanut butter, lined the crust with sliced bananas, and drizzled melted milk chocolate over the top. Delicious, but very runny! I'll make this again, but store it in the freezer until use.

Buttery Corn Bread

I served this tonight to a bunch of Southern grad students living far from home, and we all loved it! There was none leftover. The only change I made was to switch the amounts of flour and corn meal; a change I would HIGHLY RECOMMEND.

Pork Stew in Green Salsa (Guisado de Puerco con Tomatillos)

Needs much more salt than the recipe calls for, but is great! I didn't find this to be a very effortful recipe; the worst part was trimming all the fat of the pork. I used this as my entry at a workplace Mexican-themed cook off, and it took first for taste, even without garnishes. Thanks!

Coconut Cream Pie I

Perfect texture, but absolutely too sweet. Unfortunately, you can't remove the main contributor of sugar (the pudding) without losing the perfect texture. Would be perfect for kids, maybe family parties.

Corn Dogs

I made these for my boyfriend, and he loved them. I tried a bite, and next time I won't add salt to the batter, because the franks we used were salty enough. I didn't have any trouble getting the batter to stick after rinsing and drying the hot dogs. Luckily, I forgot to halve the recipe for eight dogs, because this was just enough batter for eight plus an experiment frying a slice of pepperjack cheese (would have been better with cheddar).

Cabbage Fat-Burning Soup

Not bad. Tastes pretty good for diet food, which is why I gave it four stars rather than three. I added 2 chipotle peppers, 2 serano peppers, and a tsp of smoked Spanish paprika. Next time I'll add more chipotle peppers. This keeps well in the fridge, but I will make smaller batches next time because it really only tasted great the first night.

Quick Corn Chowder

I used Italian sausage instead of bacon and added chopped carrots. I also used arrowroot to thicken the soup instead of flour and used fresh corn instead of canned. I think those last two changes were unnecessary and may have detracted from the creaminess of the dish. I served this alongside potato skins, and I, my boyfriend, and my friend were quite pleased with the meal. Next time I will probably add peas and use baby carrots.

Grandma's Egg Custard Pie

I made this for my stepmother's father, who loved it. I thought it was too eggy, and the crust was soggy even though I coated it with egg white. Might be better with cream instead of milk.

Pecan Pie IV

Five star taste, but I'm giving four stars for presentation. This turned out darker inside and out than anticipated--it looked burnt! But of the three pies I made yesterday, this was everyone's favorite.
